I feel that the end is underpopulated because there are only ender men. It would be cool if there was a type of sheep in there that had wool that looked like the sky. With the nether, we need something that you can't make mad. I saw ant do a nether cows mod video, and I thought maybe we needed something like this. Just something that can't be provoked. Maybe make mooshrooms spawn in there or something.
What about ender chickens that would lay ender pearls or eyes of ender?
HAHAHAHA good one although that'd be OP because we could get easy ender pearls without even making the enderfarm.
Spider Jockey in the nether would make a lot more sense but since you're saying a mob that won't get mad and attack. Perhaps, nether ant? Drops a beautiful yellow blood that could be use to make potions. I don't know. It just came to my head instantly. aha
What about the fire fly?
Literally a small insect on fire that would act as a living, moving light source.
When killed it would drop larva that could be hatched by smelting in an over world furnace to simulate nether conditions.
Once they hatch the flys can be placed much like spawn eggs for pretty new light sources.

They don't move they only teleport and are a half dark, half transparent colour.
They would only attack when hit.
Maybe they drop ender juice.
