According to the loading screen "hints" animal mobs currently will not despawn if they cannot move more than 20 blocks in one direction. The problem with this is that animals that spawn on the ground can move enough to despawn so what ends up happening is almost all the animals either spawn in small surface caves or get stuck on cliff edges (Like so:and not despawn (as they can't move). With the already fairly small mob limit breeding animals is hard enough, but paired with these ^ animals it's almost impossible to have more than 10-15 farm animals.
So my suggestion is a different despawn "mechanism" so circumvent these issues.
Ideas:
1. Make it so feeding an animal wheat/breeding it tames it and the baby animal just like wolves, then make it so any non tame animals can despawn regardless of how much they can move.
2. When you breed animals the baby animal forces a "wild" (untamed) animal to despawn. This would enable us to breed decent amounts of animals without having to hunt 20 wild ones and hope they haven't respawned by the time you get back to your farm.
3. A craftable "collar" or "brand" that when applied to animals tames them. A collar could be made from leather and a brand could be a tool made from iron and have x uses like shears. (credit to User
I've never really been bothered by animals spawning on mountains, but I think this would be a great idea. The only problem I see is that if you have too many of the tamed animals, you would never see any other animals anywhere, and I personally think that would make for a somewhat dull Minecraft experience. But if you only had like 6 or so of the same kind of animal, I don't think it would be much of a problem.

I don't mind the part you said about there'd be no animals elsewhere, because you can always breed less or kill your farm animals if it got that way (and you didn't like it). As it is now, I almost never see animals on the ground (except for wolves) anyways.
The problem with making animals that can't move specifically despawn is sometimes you want them like that in your far (ie sheep for easy shearing or cows for milking).
I run into this problem a lot actually it's one of the reasons why i now hate extreme hills.
I'd like to see something done similar to the PC version where animals now avoid cart tracks, But for Xbox they should make animals spawn further away from edges and avoid 2 block drops to reduce the chances of them getting stuck.
I'd love to have a farm with 40 chickens but i can't because of all the rock climbing sheep

after they fixed that one bug about animals despawning my GF had a HUGE open farm of animals and it was great to see them walk around freely (not in that 19x19 or less pen). We had atleast 1 sheep of every color and like 3-4 of the other animals. Then the game updated and we got creative mode and all that (and we had to keep them in less than 20x20) and now they are all gone). I wish we could take tame them so we didn't have the limit so we could make that big farm again

Yeah that's where either a colar or animals being tamed when bred comes in.

Well you can as long as you have dividers, but I know what you mean.
