I have no idea how many of you builders want this, but Id like to see the ability to make superflat worlds all snow or all desert. Id also like to see if we can get superflat worlds that are deeper like 64 Blocks to bedrock (and possibly even caves and minerals). Deeper would be perfect for cities with a) secret passages rivers c) ports d) subways e) mines. Let me know what you guya think
On twitter, 4j mentioned they would plan on letting us change the depth of superflat worlds, so it would make sense for them to add the option to change the material as well.

I too would like to see some more options for creative mode to make it more like the PC version and other console-based sandbox titles. Here are the things I have been thinking about.
Adjustable map depth: I have seen a few rumors about this already being considered and many people who want the option, but I think this is the best way for it to be implemented.
Depth Slider: allow players to choose a custom depth via slider with a minimum and maximum value (at least enough to match standard sea level). The slider would allow much greater control and keep the "out of bounds" area outside the map at the desired height to provide a better look.
For example, if I wanted to build something with tunnels underneath the ground I have to build extra layers and sacrifice generated structures/villages to do so; not to mention the time involved. The current option leaves an awkward cliff/ledge around the edge of the map where the artificial floor level doesn't match up with the outside area. This is further complicated by the ability to move around in the one-block "limbo" area without being able to mine from it, which means players could get stuck in this space without the option of digging their way out if a map has a raised floor level and is being played in survival mode.
Scenery options: I have seen a lot of people asking for this one and I think it would work best as a sub-menu with listed options/checkboxes.
Choose block type: Provide a list allowing a select few blocks to be used instead of just grass, such as sand, normal dirt, stone, or maybe even water. This could be important for some of us because the block type goes past the map limits and has a big effect on visual appeal.
Biome-related options: This one may be a bit much to ask for, but I can see at least some options being possible even for a super flat. Certain biomes like Tundra, Forest, or Desert could be applied to the entire map (or possibly randomly mixed). Even if water (i.e., lakes and rivers) does not generate on the map it would be nice to have for people who wanted snowfall, giant deserts, and similar environments on a flat map.
Generate trees/plant-life: Although biomes may be too complex it should be an option to generate trees or other plants (based on default block type) similar to the "generate structures" option. Maybe random trees, default, or even options for specific kinds. For example if the map is all grass, trees, flowers, and tall grass; if the map is all sand, cacti, and dead bushes.

I really like your ideas especially the biome selection. It would be great to have the ability to deselect certain biomes as well. I have seen a number of maps that have overwhelming deserts or oceans. If we could chose the percentage of the biome it would really make it more engaging and fun since the builder has more control.
I also agree with the idea of having a slider or some other way of controlling how deep the base is. I still love to explore caves and ravines but like the superflat option for building. If they could make it so you could still spelunk and mine but have a superflat world for creation it would rock.

I just took the Minecraft Noob test! Check out what I scored. Think you can beat me?!
That would be great to add, making a world all one setting makes it perfect for having arctic style maps, or purely desert maps. If they really do plan on changing the depth I hope you can change materials in the world to.
