You can have 4J change the control setup to anything you want to make you happy- but now you just ticked off a whole new set of people who liked it the way it was (or wanted something different).
The only way to make everyone happy is to have customizable controller setups. It would have to be tied to your gamer tag some how or every time you played you'd have to set it up again. Don't know if that could be made to work, much less if it will ever happen.
I think you can learn to use the existing system long before any customizable button setups will ever happen.
So a few people have problems with the control system. Now the OP wants to change it, in mainstream, for the millions who have already learned it one way?

Lol, lighten up... I know of many people that have done this, not death gripping their controllers at all (It's the press of a finger on accident, not a death grip). Actually, now that I think of it, I do it from time to time, just have never gotten killed cause of it. It's just me moving my pad around, but I guess I'm a angry monster slamming it?

I've just never clicked either thumbstick on my controller by accident. Ever. So it's hard to believe that people do it on accident.

I see people do it all the time, either they're lazy, clumsy, intoxicated, or it's simply an accident, but it happens. I truly believe with such a unused function, it could be in the start menu.
Putting it in the start menu is counter productive.
If you change you're view you won't have it changed for very long before going back to first person.
No one plays in third person or reverse view and having to pause each time and click through menus would be a pain.

Wow, is it really that big of a deal to you all for the option to disable the POV? I press it sometimes too on accident although it has never killed me. The controls in this game do bug me a lot though and I've been playing a whole lot of minecraft and I still havent gotten used to it.
My biggest issue is that my controllers are all about 5 years old and after much use the sticks don't work properly and most of the time I can't sprint. (they get stuck forward and the stick moves on its own and such). I don't want to have to go buy new controllers just because they decided to put sprint on double-tap. I wouldn't mind as much if they didn't say before hand that they were originally going to put it on click and move the POV to one of the D-pad buttons. It also really bugs me that after saying they want to cater the game to the xbox-playing demographic, they then decide to change it from click to sprint, to double-tap. I personally think that most xbox players would be more comfortable with click to sprint rather than double tap, but that's just me.
Anyways, I don't see why they don't just add mappable controls or even just 2-3 different control layouts.

Lol, this happens to me frequently. Stupid creepers sneak up on me and cause me to click both the sticks. Then it's a mad dash to try and get away and switch the view back to normal.
That's a false assumption. I play Minecraft in third person quite often. Sometimes I just feel like it and it lets me see more than first person does.

Third person is terrible. If you use it while traveling I can understand. If you are saying you actually play in third person, like in survival or to place blocks, then you sir are a liar.
Placing blocks where you want is nigh impossible.
Set the change orientation button to select, and add a players list in the pause menu. Problem solved.
They could have it set where you must hold the back button to see the player list.
Then everything is still on the controller and everyone is happy.

It's a reflex reaction for me to tighten my hands when I'm startled and with the controller in my hands, that reflex tends to accidentally trigger the POV in Minecraft. I have also died as a result of it because I wasn't expecting the POV to change at that moment. It's a reflex that has been very difficult for me to learn to control, and I'm not sure whether I'll ever be able to train myself sufficiently well to guarantee that it won't happen from time to time. Since a little bit of arthritis in my hands seems to make it difficult for me to also use the current sprint technique, I would really like it if I could change the POV and the sprint around with each other on the controller.settings.

FYI, the current few options we have for customizing our controller setup (e.g. the invert look toggle and the southpaw toggle as well as the 3 subtly different controller maps that already exist) DO currently follow the player (i.e. they are already associated with the player's gamertag). That is, if I have "invert look" toggled, which reverses the up and down motion of Steve's head, it doesn't matter which of our controllers I sign in with or which world I play in, the setting for me remains toggled. If someone else signs in on the same XBox with a controller I've just used and plays Minecraft, the toggle reverts back to whatever they've set it at.
Let's poll all the 5 million users and find out for sure.

I often forget about the D-pad and make minor adjustments with A, which usually ends with me plummeting from the sky. I think they should change it to something that's more difficult to activate accidentally. Maybe pressing A and down on the D-pad simultaneously. I know that's a bit weird, but they wouldn't have too many options here.

Double Tap A (flight) is not an issue in Survival Mode unless host privileges are also activated; so it really doesn't impact the "game" as a game. However, the POV is active in all modes; and while hitting it accidentally may not be an issue for a lot of people, there have been quite a number of different people who have mentioned having some difficulty with it.. and it can cause the player to be killed during regular gameplay. Likewise, getting into sprint is probably not a big deal for most people, but it can also be an issue for some of us who either have older controllers and/or older hands.
There are already some toggle-like optional controls in the game (invert look, southpaw). Why is adding another to toggle the actions of the left stick a bit so controversial?

If you click the right stick in while flying, it takes you down in the same manner as the A button would take you up.
