Plains biomes(grasslands) are generally very hilly. Forests are usually a bit flatter but require logging. Swamps are the flattest but have lots of water.
The solution to these three problems: terraforming.
To fix plains biomes you'll need to even out the landscape. Fill a little here, remove a little there, etc. You can make it completely flat with a lot of work or you can make it flat enough to work with and be natural.
To fix forests you'll need to do a lot of logging and hardly any work with the ground.
I personally like swamps because the grass is so green. The problem with swamps is there is so much water. With a few stacks of dirt you can fix that. either replace the top layer of water with dirt or go up according to how high the rest of the terrain is or how you want it.
theres no such thing as a perfect seed, only you can make it that way. Hope this helps.
