You may want to have read one of the other many, many threads reporting this issue before you went to all that trouble clearing, etc. The answer is to reset your in-game settings to their defaults:
Help & Options - Settings - Reset to Defaults
The problem results from Minecraft occasionally setting the sensitivities and other game controls to 0% (at least sometimes due to a less than perfect download of the update, although redownloading the update does not generally fix the issue). This will fix the sensitivities issues regardless of what settings were actually affected; and you can set your specific preferences through the same menus if you so desire.
