Well typically you pour lava when being attacked then you could just pick up the source block to leave. You could also use enderpearls or dirt block your way up. The reason attackers can't dirt block there way up is you would be shooting them off with a bow. You could also use a nether portal transport. So you could build a room at the top with a nether portal go through it then come back and build a portal hidden maybe under the ocean monument. That will connect the portals so when you enter either portal and return they will both take you to the portal in the room on the tower.

This is base building with one bucket of lava. Easy to build, few recources needed, great views, easy to defend in PVP, etc.
