I recently bought Minecraft and attempted to try to get the best possible graphics on it.
I got:
LB Photo Realism Texture Mod (256x256)
OptiFine (Multi-Core)
MagicLauncher
Default: 60+ FPS
OptiFine maxed out: 40-60FPS
OptiFine maxed out + LB Photo Realism: 5-20FPS, the game is also incredibly choppy where it seems to "freeze" completely for 3-5 seconds every 20 seconds or so
Java also crashes after playing for only about 3 minutes due to "not enough RAM". Java was using 3.3GB of RAM.
i7 920 @ 4.2GHz
6GB DDR3 2000
GTX 580 @ 850/1200
Is this just a limit of the game? Or am I doing something wrong?

I believe the game is actually maxing my VRAM out. I disabled Optifine's 3x increased view distance and I get a steady 60+ FPS. When I enable the 3x view distance, I keep getting 5FPS bursts and then 30fps, followed by more 5FPS burst.. which makes me believe either the game can't handle that (or im maxing out on VRAM). I'll be grabbing the GTX 680 in about 3 days when it comes out, so i'll see how that performs.
With the draw distance set to default max, the rest of Optifine maxed, and 256x256 textures.. the game is 100% playable.

With 3x view distance, it will use 9x as much memory (3^2). Unless you have like a 2gb card and over 8gb ram, you're probably better off without it, as nice as it looks...
