I keep getting this weird feeling that all is not what it seems with this coming update and it's snapshots... it's as if something bad is gonna happen. Anyone feeling the same way? Even if it's only a little tiny bit?

What is it that makes you feel that something isn't right? I admit that some of the stuff in this update reminds me a whole lot of the April Fool's Update, where stuff was just a little bit off and strange. Certainly the 1.7 update has only just started, but this snapshot does represent several weeks worth of effort (in between other things like PAX and other comings and goings of the Mojang crew).
At the very least, if you don't like the changes done in 1.7, you can always stick with 1.6.2. It is even much easier to roll back now even if you update.

I think if anything is going to be really disappointing, it will be the lack of new mobs to match the new biomes.
Adding the new biomes opened up so many possibilities; it would be a shame not to take advantage of those possibilities.
Perhaps what you're talking about is a general departure from the "feel" minecraft has had since...well...1.8. All these new biomes, new trees, random splotches of stone and giant towers of ice are like nothing we've seen before. I remember when 1.8 came out, and I saw a video of some people exploring the new mineshafts (yogscast?) and they said it felt like a terrain plugin and not vanilla minecraft.
I think that otherworldly feel tends to come from changing the terrain. But while the terrain changes in 1.8 (I think) were probably in the wrong direction, I don't think I can say the same about this update. It's certainly different, but in a way that's trying to fix the flaws of 1.8. The biomes are all mixed up now, and there are lots of new things. That being said, there are definitely points they need to fix: clay canyons don't generate, there are huge patches of stone, and the new extreme hills and island biomes have lots of squares and sharp edges.
If it feels 'off' or weird because the terrain is different and there is some new unfamiliar stuff, I can understand, that takes time to get used to for some. If you're talking about some vague and personal sense of 'foreboding', though... O_o Uhh, I'm not really sure what you mean.. This is only the first snapshot, I have a magical future-sense that a lot of this stuff currently bothering some people (absence of new saplings, weird snow line, etc) is going to end up tweaked in subsequent installments.
Personally I am excited, to me the terrain looks much nicer overall (it could always use improvements here or there) and I've wanted more flowers for a very long time. I don't have any really negative feelings about this update, I'm looking forward to where they are going with it. If anything, I certainly can't see the game getting worse from any of these changes.

Of Jeb, Dinnerbone, Grum, and Notch, my favorite dev is BY FAR Jeb, but his Achilles' heel seems to be catering to masses of complaining people. Ni and Fe don't mix well.

Jeb probably won't add any new mobs in this update. He'll probably add them in the 1.8 Adventure Update (The NEW Adventure Update), along with all the generated structures he'll be adding. My advice? Don't play survival until 18.
Remember this is only a snapshot. It's not gonna be a final release. And even if 1.7 comes out with no new mobs, they can always add more later on!
Oh - the super-secret feature includes a ton of new animal-like sounds. Half of them are just for the Dragon (but they sound like a bear), and the other half are sounds made by none of the current Vanilla Mobs.
