More advanced difficulty setting that allows to enable/disable harder features like infinite zombies, machine bow skeletons etc.
(but In hardcore mode, all settings will be maximum and you can't adjust the setting)
I always wanted new difficulty setting because some harder feature affects ALL difficulty expect peaceful and that can NOT be disabled without mods or version downgrade.

Personally, I'd love to see a better way of creating food items in Minecraft that represent bake-able items in real life. Cakes need a better recipe (one that is similar to that of sponge cakes) and should be cooked in a bowl before being completely ready. Bread should be made into dough, requiring flour and water, and then cooked to become proper bread (in return it should heal slightly more hunger points). Cookies should be made into cookie dough, requiring flour, cocoa beans and water (or butter if we want to be even more realistic) and then cooked, creating 8 freshly baked choc-chip cookies. Pumpkin Pie would be rather difficult, but by putting pumpkin, sugar and an egg into pie crust dough and cooking it in a bowl, you get pumpkin pie! I reckon Pumpkin Pie should be placed before being able to eat it.
Other baked foot items could also be added, such as Shepard's Pie (got random meat? Chuck it all into a pie!). but alas, it will probably be a while before that happens. One of these days though, there will be The Food Update!
More Ores, Seriously how cool would it be if the added more ores, like in the Nether and stuff. I've played with a lot of mods that have more ores and they are seriously really fun and makes the game that more interesting.
Mojang said no more tool tiers, but there could still be more ores but they would have no tools for them like emerald
I would like To be able to breed horses and like make Pegasus etcI also hope to be able to find like custom dragons on extreme hill biomes like a ghost dragon fire dragon night dragon.
At this current moment actually, I really hope they do implement cherry trees.
Since biome changes have already been confirmed, oceans are probably going to at least get something since there is going to be changes made to fishing, the only other feature really left in the dark right now (that's been poked at by staff recently) is the possibility of cherry trees.
Aside from the fact there hasn't been a new tree added to the game in about two years now...if they get a new plank color and it looks anything like the cherry wood from BoP, I may have found a new favorite wood type besides spruce.
What I would absolutely love to see in the update are 2 things. One is where a ghost (not Ghast) spawns at the players death location and despawns from the players previous death location and there can be one ghost per player per overworld.The point of this is that the ghost is a close to invisable (barely visable) as it is a misty transparent mob and makes redstone and lighting devices go inverted within 8 blocks of the mob and the mob can't leave 64 blocks from the players death location.
The second suggestion is lapis dust. It would have the same properties as redstone dust but cannot join to redstone dust or redstone block although lapis dust can join to other redstone devices such as a repeater, comparitor, trapped chest, piston etc. Then lapis block would have the exact same properties as lapis dust but it would be a block form meaning the circuit can go up and down with ease. The point of lapis dust is that it will allow to redstone/lapis wires to go side by side without connecting to each other. However one thing that would be good adding to lapis dust is making it a static cercuit meaning it can go 32 blocks without a repeater and is either an off or on state. Also devices such as a repeater or comparitor can compare or connect lapis wires with redstone wires so if you wanted to join a lapis wire with a redstone wire you would use a repeater since it's a compatible device shared across the two wires.
Main thing I keep hoping for is for biomes to have bigger effects on their undergrounds, because the underground is like half the game, yet biomes are only skin deep when it comes to them.
So far everywhere underground is the same, with the exception of extreme hills biomes, where you can find emeralds and silverfish, and in 3 specific spots in the world, theres strongholds. Meaning 99% of the underground everywhere is the same, making underground exploration repetitive.
To fix that I'd like every biomes underground to be unique.
So some examples:
-desert undergrounds would use sandstone instead of stone, all the way down or atleast much deeper than currently, and have more of certain ores, maybe more lava.
-jungle undergrounds would have more mossy cobblestone and deeper dirt layer, more large pockets of dirts and coal, wood roots stretching down into the ground, underground vines and large pools and more diamonds
-mushroom biomes undergrounds would have large caves with giant mushrooms in them
-the new canyon biome underground would have underground pools and hardened clay deep down, and some pockets of soft clay lining the water pools
-snow biomes undergrounds would have ice pools deep underground, some deposites of snow blocks down there
And so on.
-maybe each biome has 1 ore type that they can have motherlodes of, so like possible to a blob of 20 diamonds connected in a jungle biome underground
Basically, when you mine into a new biome, youd know it, because it was would very different from the other biome you were in, and you'd have reasons to mine in specific biomes, so you wouldnt just need 1 mine for all your mining purposes.
The other big untouched area of the game for me are the giant oceans. They take up much of the world, which is actually great for separating things, but are so barren. I'd like to see things like:
-coral, sea weed
-ocean terrain features: whirlpools, maybe shifting water terrain, and different water heights in places to make navigating interesting, deeper water with underwater floating blobs of land (like a big blob of clay or wood just floating there) and random driftwood in the water or on beaches
-sea monsters
-shipwrecks
-zombie pirates
-fishing overhaul: sometimes get multiple fish, bigger fish, random garbage, treasure maps, treasure, all only in ocean biomes
-large faster boats: like the size of a house, with their own cargo hold and bed, and maybe autopilot feature, and able to have multiple people on it, and customizable
And I'm sure a million other possible fun stuff for oceans.
But ya, to me, the underground and oceans take up most of the world, yet have the least variation, so they're the two areas I'd like to see get big overhauls.
