Well, the poisonous potatoes are probably based off the fact potatoes become poisonous when they start to sprout. Maybe they are gonna be used for the same purpose as normal potatoes? Of course, potions would make more sense.

Look it up on Wikipedia. I've seen them in real life. While unripe (and mildly toxic) potatoes are fairly uniform green, sun burn potatoes tend to be more green on one side. Long exposure to sunlight makes the potato root produce chlorophyll, and toxins, like the leaves.
For me potatoes are just a waste of item ID's. They don't have any use except for food, and because of that I will probably never farm them. If they gave potatoes another use like the rest of all the farmable foods, it would be worth it.
I think potatoes are the only vegetable that gives you XP orbs. You get XP when you bake them. Otherwise, in Vanilla, baked potatoes are a little better than bread (6 vs. 5 hunger), and raise your XP a bit, though they consume food. EDIT: "consume fuel"
