If you don't like mobs then play on peaceful, this
news sucks, the odd block missing here and there isn't anything to stress about.
Playing on Peaceful gets rid of half the gameplay, and on Multiplayer servers it makes things even more boring. That's just not an option for most people.
And just because you don't mind your landscape looking like it was just hit by a Hurricane, doesn't mean other people feel the same way.
It's also a lot more than "the odd block missing here and there". If you spend any real length of time in an area, it will suffer significant vandalism. Lighting up the whole damn world is irritating and ugly, not to mention vastly time-consuming.
I don't totally hate the Endermen, but as already pointed out they were supposed to be mean and scary, and instead they are weak and annoying. I'm not calling for a complete removal of their block-moving ability, but they do need some fixing.
The only argument which really stands up, because it's a fundamental difference of opinion, are on the one side folks who say they don't want anything to happen in the world unless it's been caused in some fashion by them, and the folks on the other side who say they want the world to exist outside of their own agency.
That's a false dichotomy. A good number of people don't mind things changing in the world without them, it's the entirely random, nonsensical, and destructive nature of the changes they dislike.
There are also more solutions than simply 'siding' with one of the two opinions. A balance can be found to satisfy MOST people (some people are simply NEVER happy about anything) For example, if the Endermen only moved blocks when they were Aggro'd, I think most people would find that to be OK. You'd get mean Endermen, moving blocks, and without fear of random vandalism.

The light source has a function. Endermen's pickup ability does not.
