I guess Stone Golems/Sandstone Golems/Wooden Golems could work for Biome-Specific Villages, which I really hope get implemented. Nether Brick Golems that give Netherwart instead of Roses for Pigman Villages in the Nether can work too, I believe. They'd just have to be blast-resistant. And capable of shooting Arrows or Fire Charges. Or flying.
Personally would love to see more "golem" type mobs, they are "craftable" and pistons were the best thing in minecraft aside from the game itself, at least for me. So more automatic interaction between the player and the world is welcomed by me.
However people tend to get quite angry when it comes to new things, for every topic thats enthousiastic that there is a lot of new stuff coming there are 3 topics claiming its either "overpowered" or that it's "stupid and not what they wanted". With Bergensten's statement they will most likely be bugfixing next week to gear up for a 1.2 release soonish (tm) the bugs generated with all the new content will most likely be fixed and we can get rid of some of the "newness" animosity.
So for now voted No on being added, Yes on would like to (in the future)
I'd like to see a Wood Golem, it would naturally occur sometimes in forest biomes and replant forests that have been cut down or burnt down. And you would be able to craft them yourself and it would grow a forest wherever you are.
Another one would be a stone Golem. I'd like this to be the protector of the stongholds, or maybe something else similar to strongholds which holds treasure. It would act like a statue at first, until you opened a chest or did something else that could trigger it, then it would activate and try to kill you. Not sure what it would do if you crafted it yourself, maybe protect a 20x20 area from any mobs and return to where crafted and become a statue when no mobs are about.
Maybe that dirt room in Abandoned Mineshafts should have a cobblestone golem?
Cactus Golem sounds awesome too...

The "Iron" Golem protects villages.
