Think of it as the water melting them...or making their pumpkin heads all mildewy and rotten.
Snow golems are extremely useful if you know how to use them.

Fungus only grow in humid places.
Fungi grows in cool, damp places. Not humid places. But to the point, if you know how to properly use the golems, they shouldn't touch water anyway.
