The Enterprise D. The Empire State Building. The very large globe of the planet Earth. Remember all these projects that were made a while before? All of these required large chunks to be removed in order to make a project of that sort of scope possible. (If you don't know them, google them up. It's worth the visit.)
With Superflat land where you start at 3 elevation, you can do all kinds of large scale or even to-scale projects without having to load up an editor or dig out the space needed beforehand.
Changing it to 32, 64, or 55 will defeat the purpose. If you can't comprehend that, then Superflat is obviously not for you, and you don't have to do anything with it. Just load up a random survival world and go nuts. If you want to build on high elevations, go find a mountain biome. Lots of those peaks have plenty of space on top for activities. And lots of ores below to mine out.

Super flat is very good for building. But I would like to be able to change the type of block the world is made up of (not just dirt).
Before you say it, I know that Jeb is working on it. But still, I'd like to have that option without using MCedit and stuff like that.
I hate to bust your bubble, but Jeb isn't working on Minecraft just for YOU. He is trying to make a game that anyone can enjoy. MCEdit was made so you can make Minecraft just for YOU. If you can't be bothered to use MCEdit, why should you expect Jeb to bow to you and go out of his way to do something for you? There are still a lot of features that have yet to be implemented without Jeb and Jon having to tweak one little world option that modders can instead do.
Modders put a lot of effort into their projects, and they do it with zero financial reward. By saying something like MCedit is beneath you and instead Mojang should just do all that you wish for, then you are basically spitting in the faces of all those people.
Don't be like that. If you want obsidian, sand, or tree leaves instead of dirt on the surface of Superflat, then use a mod to do it with. MCEdit is an awesome tool that should never be underrated or passed on when it can serve your needs in Minecraft.

When did I ever say that I hate modders? I'm just saying that it is a nice feature to have and that Jeb can take his time to ensure that it is done well. Just that, nothing more. I do use mods and I respect the people who make them. Repeating again, I'd never said I hate mods and modders.

Probably not added because of Ghasts blowing up the Netherrack and the Blazes and Ghasts being able to fly to the top of the world. That's why there is a top to the Nether (And since it's supposed to be like the Afterlife)

Slimes spawn on peaceful though.
Bonus: an option to have layer 128 as entirely bedrock. A world that is forever underground.
Well apparently it's not gonna happen, because in a superflat world, the nether is still hilly
