I thought Jeb added it so you could smelt gravel into 'stone chunks', which could be put together into stone blocks or something. I tried this in the game, but it didn't work. Wasn't this in a snapshot, or am I horribly mistaken? Was it at least planned?
I never recall it being mentioned/planned to be added, although I think it would be nice to make gravel smeltable for instant flint.

Gravel is absolutely useless, but if you could smelt it into smoothstone, it would have a purpose. I have tons of unused gravel, and it'd be a great way to get rid of it if I could smelt it into 'stone chunks' that I could make into a block.
Well, if it's planned, I'm looking forward to it. I hope it's in 1.2.
Just because something doesn't have that many uses, doesn't mean it needs more. It can be used for note blocks if you don't have sand, It's used for decoration etc.

Don't forget easily removable scaffolding for large building projects.

When no one was looking, the Endermen took forty blocks.
They took 40 blocks. That’s as many as four tens. And that’s horrible.
And works well in filling in lava, water, and other liquids that might be in the way, as well as a filler inside or beneath structures. It's quick to pick back up and you tend to have a stupidly high amount of it after a few days of playing, which makes it useful for these sorts of things. But yeah, was a planned feature that never went much further than that.
Check out 'Compost Bins', a suggestion thread.

I think it would be nice to see gravel smelt into flint for easier production of materials for arrows.
and then craft smoothstone into stonebrick?

or use pistons to do so
