Considering it takes more experience to level up based on how high your level is, bringing an enchantment table and bookshelves to the end may benefit you.
If upon defeating the dragon, if you were to only pick up enough experience to enchant 1 item at a time, you could theoretically enchant many more items to high levels.
I have not tried this as I'm busy playing skyrim, but I see no reason why this shouldn't work.
Theoretically, you could make 2857 level 1 enchantments with the amount of XP the dragon drops.

Once the portal is up you can go back and forth. I left quickly the first time but went back and the XP was still there but it was invisible, so I ran around picking it up. Didn't know about enchanting then.
But yeah. 2nd time, I put a bed in the Stronghold portal room with chests etc, made new tools and armour, Enchanting table and Brewstand before going in. And everything you need for Enchanting is around the Stronghold. Hundreds of Bookshelves, of course but also hidden diamonds in chests and Obsidian at the Portal room. Enough for a Nether Portal too, to get gear from their first.

But you can only take so many in your inventory... you're right though, it would probably be best spent on little things.
