Great... color Endermen invincible. But that says NOTHING about their abilities. Seriously, what can they do in the situations I mentioned? There needs to be a mob that can threaten us in our shelters/fortresses... not be helpless when faced with a simple 4 block high sand pillar.
If there is a mob that pays no attention to the safety of your fortress, and can easily rip into it and kill you, what is the point of building at all? The purpose of building a stronghold after-all is so you have a safe place is it not? Some people don't like that endermen could rip up their structures, because a few blocks each day adds up to hundreds of blocks real quick.

Oh you don't understand here. You are talking about a new dimension as far as gameplay. They are talking about the new ender dimension. That is why that was Ironic.
Anyway. Moving blocks was a really bad idea to begin with. It's not like they are going to move the blocks of your house than walk inside and kill you, they only attack when they have been provoked by you looking at them or attacking them. so even if they could move your cobble fort they would take like 1-2 blocks and then be off.
In all these discussions of Ender-griefing, those individuals in favor of Endermen's block-moving ability almost unanimously claim that the ability provided a new challenge - that it made them dangerous. That it added something to the game.
In response, I myself and others of the opinion that Endermen's block-moving ability is a terrible idea usually ask "What, exactly, is challenging about upkeep? Where's the challenge in running around one's base, mine, various farms, mob spawner/grinder, etc. and replacing random blocks on a daily basis?"
Never have I seen an answer to this question. Granted, I don't troll the forums 24/7, but I've read several Endermen threads - enough so that if there were a common response to this line of questioning, I'd expect to have seen it.
The reality is that the Enderman's block-moving ability does NOT add any level of genuine challenge to the game. None. Zilch. Zero. On the extraordinarily rare occasion that the Endermen might actually remove a large enough space in the wall to let a smaller mob through (Extremely unlikely if the player is maintaining their base), you kill that one mob and plug up the hole.
It's an implemented "upkeep." And it's crap. For much the same reason that the torch/lantern issue was abandoned (Who the hell wanted to run around relighting all their torches every day? Anyone remember those discussions?), the Endermen get hit with the nerf bat, and rightly so.
Personally, I'm not even a fan of their REDUCED block-moving abilities in 1.9.2-3, as their ability to pick up dirt, sand, and grass blocks still presents the obvious "Ender-erosion" issue. On long-running SMP servers, Endermen will rip the landscape to shreds. Long after release, when many of us have SSP maps that we've been playing for 1-3 years, Endermen will rip our landscapes to shreds. It's the inevitable result of their ability, and it's in no way the fault of the player (Unlike Creeper craters).
So, I'll mod them. I'll break my rule of primarily playing games Vanilla (With exceptions to texture packs, and possibly water shader packs - some of those are ****ing gorgeous). I don't like using mods (Never have, because who knows how long the mod will continue to be supported through the game's lifespan?), but I'll do it. And I'll be doing it because of the deficiency of the mob in question - the inclusion of an ability that does not and never did make any sense. Their ability to move blocks is nonsensical, and adds literally nothing to the game. Not challenge, nor flavor, nor purpose.

i agree with op, when endermen were added i was suspecting a mob finaly able to give us a challenge. now alot of posters suggest that it would be pointless to run around replacing 1 or 2 blocks. i dont think the op meant that he was disapointed in their abilities this way. no1 likes random griefing. but if they were trying to get to you and attempted to break in by dismantling your walls that would be rather interesting to have to survive a seige. but as endermen have been nerfed i have found that a few mods make easy replacements of endermen in that respect
I was really looking forward to the Endermen... finally a mob that could pose a threat to what barriers I constructed. This was what I hoped the rumored Zombie Siege would be. But when I finally got 1.9.R3 I found out the capabilities of the Endermen had been reduced to moving just a few blocks. WTF
I've bumped into a few Endermen and now find them to be a worthless addition to MC. They COULD have added a new dimension to the game but they just lack the capabilities. I build a pillar of sand... they stand like idiots at the bottom. I build a cobblestone fort... they stand like idiots outside. What's the point?

Well, for one thing, it made people on servers start banning people for greifing when it was actually Endermen.
For two, there's no way to stop them from spawning wherever they please, so they can spawn in your complicated redstone creations and cause HOURS of damage to them. Even having torches everywhere doesn't dissuade them.
Also...you clearly haven't been riding around on an elevated minecart track, only to see an enderman pull out one of the blocks, causing you to plummet to the ground and into a pack of creepers. >_> that really pissed me off.
Some of us LIKE to earn our materials in survival mode, and then build some cool stuff in that world. And it's very annoying to come home from a day at the mines only to find your house full of holes, or worse, on fire due to a certain mob moving the fireplace around.
And lastly, it kinda sucks when you have a really nice forest or something outside, and they turn it into a visually unappealing mishmash.
Endermen are supposedly really tough in 1.9 P3. Yeah, they won't move artificial blocks, but they apparently do a ton of damage, so you won't be wanting to cross eyes with one unless you're looking for a fight.

Ummmmm, Hate to break it to you, but most people don't LIKE excessive challenge. Why do you think Roguelikes are so rare? Because they don't sell well, due to only a small subset of gamers enjoying extreme challenge. Yes, you have the occasional smash hit like Demon's Souls, but those are few and far between.
Plus, it's easy to make a game hard for yourself. For example, use only wooden swords, and no armor. don't use torches in your base. Live only on zombie meat. ETC.
It's MUCH harder for someone to make a game easier for themselves when the difficulty isn't coming from the difficulty settings themselves. And those who DO are often branded cheaters or cheap scumbags for "not playing the game right".
Lastly, as many others have said: How does being forced to keep replacing blocks every day amount to more difficulty? It's not hard. It's just a grind. It's pointless upkeep that distracts from the rest of the game. Like the stupid freakin runey system from Rune Factory Frontier, a pointless and annoying form of upkeep that RUINED an otherwise perfect game for me!
I have been playing the easiest one on EASY and I have been getting my ass kicked six ways to sunday. If you're looking for a challenge, this set of maps will give it to you, and then some!

a bunch of boohoo babies on reddit got their blocks moved and they cried so much that Notch took away their ability to move any block. But they got buffed quite a bit in the way they fight so there's that. I guess.
I've been wondering so long why people think Enderman griefing your world is a challenge. That's practically the equivalent of saying SMP griefing is a challenge. Over the course of me playing on Beta 1.8, I've seen so much damage caused to innocent trees, and random dirt blocks placed. Enderman are a problem in this world. You might say "O YA JUST PLAC A BLOK BAK NOT DAT HRD!!1" Oh, really? You think it's so easy to replace a diamond block? I wouldn't be so angry about this if you could get your blocks back when you kill it, but since you don't, Enderman are a huge annoyance.
Before I continue, I'd like a reason as to how it's a challenge of getting griefed on a nightly basis.
