In the old forums, when quoting another user, the posts they quoted were removed rather than nested in your quote.
Personally, I think this should be the default behavior, but now quotes nest. The reason that I liked the old way better is that this prevents people from quoting tons of nested quotes which take up a lot of room, as well as not being needed to be in your quote in the first place.
On the other hand, there are times when this might be needed, such as when user 1 says something, and user 2 say something athough much less specific than user 1, and you'd like to reply to both of them. Quote nesting is not necessary in this case, however, as you can easily just quote both of them.
A slight different note, is it possible with this new forum software to automatically detect extremely long quotes and tell the user "hey, maybe you should trim this down to only what you want to respond to" and spoiler the quote if they click "post anyways"? Possibly when it comes to quoting an entire OP it could say "when replying to the original post or entire thread, quoting the original post is not necessary and takes up too much space" and possibly not including the quote at all?
This same feature would also be useful for long posts that have crash logs in them. Maybe it could try to spoiler them for the user and tell them they should do this next time?
These features would cut down on page-stretching spam created by new users who needlessly quote or don't know about spoilers. This shouldn't affect any posts that aren't long because of quotes or crash logs, as many posts on the forums have legitimate reasons to be long.

It’s the unpleasantness of the system that keeps me out.
I’d rather be in, in a good system. That’s where my discontent comes from:
being forced to choose to stay outside.
My advice: Just keep movin’ straight ahead.
Every now and then you find yourself in a different place."
