What projects are available to work on?
Also, how often do mods give out items?
While we are pretty tight-knit, everyone is generally easy to get along with. There are lots of ongoing projects at the moment that you can find at this link (http://godcraft.com/forums/projects.9/). Lots of people still want help with theirs, and there are also many communities to join where you can build your own house within a city.
If you have an idea and want to build something yourself, that's also fine of course - there are thousands and thousands of blocks worth of untamed land still on the server, so you wouldn't have any trouble finding a place for a large (or small) new project.
As far as giving out items, it's not something that generally happens I suppose. Often if someone asks in chat for something and a person has something extra, they can meet in /warp trade and do an exchange. Sometimes people will give out starter-packs for new players who want to help with their projects. It's really all situational. I know when I joined the server, the first thing I did was go a couple thousand blocks out to a remote area and build up my resources while slowly getting to know the community. I definitely prefer the way I joined, but if you want to dive right into us, there are so many options.

I think what JDP was asking if mods spawn items and give them to people. In that case, we don't ever spawn any blocks, we are a legit server and every block that you see was mined and placed.
