I'm having difficulty finding enough iron to meet my needs.
I see all these videos from people who have these massive transport systems with dozens of minecarts creating boosters and stuff. How the hell do they get that much iron?
I built a very deep mine with a small one-way rail system a while back, with one minecart, which I lost at some point. Part of the problem is that I keep getting attacked by monsters and losing all my iron. And the areas where iron is abundant are infested with monsters, which are difficult to deal with.
Any tips or strategies as to how I should go about getting more iron?

Minecraft Beta 1.2: "I'll grind your bones to make my bread!"
Switching to Peaceful mode helps a lot and try mining about 10 blocks above the Adminium layer. I have found an unbelievable amount of iron around there.
wtf... now I'm auto-healing somehow. Is this a bug? If it is, I sorta hope it remains. : D
...that's a feature of Peaceful. Enemy mobs are despawned and you autoheal.
How to make huge transport systems? In order of legit to cheating: Option 1) Play alot. Especially use some methodical patterns for making sure you find it all. Option 2) Use Cartographer to map out the locations of iron veins (I wrote a program to help me out with this); or you can use MCEdit and noclip the camera into stone, giving you a great view of all the veins around. Option 3) Use multiplayer and use the "give" command on the server. Option 4) Use invedit to edit your inventory.

Not all servers have option 3.

High-fives are a renewable resource, so there shall definitely be more.
Don't play on peaceful, always play on easy/normal/hard. This way you get better at fighting monsters and minimising risks.
To avoid loosing iron (and other valuables) avoid carrying it about when you are in danger, keep it in chests.
When mining caves pacify the area before mining extensively. Put up torches and maybe block off unexplored areas of the cave with fences.
Take food with you into the caves so you can heal up.
Wear armour, leather armour helps alot and is a renewable resource.
Know how to reach your location from your spawn point. Have a chest at your spawn with armour, weapons and food to assist in retrieving items should you die. Build a path to the entrance of you cave/mine, use tracks and elevators if its a long way away and you should be able to get your items back after you die.

I meant start your own private server.
I've used all of these options at one time or another. I copied my World4 and set it as a private server's world, then myself and a friend worked together on building a glass house on an island. Whenever we needed wood, glass, or torches I switched to the server and typed "Give (name) 5 64" Shift+Home, Ctrl+C, Ctrl+V, Enter, Ctrl+V, Enter, Ctrl+V, Enter, Ctrl+V, Enter, etc.
When we were done, I copied it back to World4 and could play single player on it (making me able to use buckets and not have to deal with the damn doors opening and closing spontaneously or the top and bottom of the door being out of sync)
I generally use option 2 because it's the least cheatish. I justify it as ground penetrating radar. :-P

Also, can't you just fight them like a real man?
I just found and destroyed a mob spawner, so that should eliminate a lot of my problems.
... Not sure if trolling...

Although I might turn it off sometimes because running from mobs in deep caverns can be frightening and fun.

Regardless all the good stuff is near the bottom, around level 10 to 15. I usually can find Iron next to a coal pocket since I dig around the coal.
