From what I understand a beta version means that all the gameplay elements are allready added and the beta is just polishing up. I like how we are getting new features every now and then in Alpha. Please stay in Alpha!
In alpha you get the game working properly and release the basic gameplay.
In beta, you make sure every feature works properly and don't conflict with each other in any other way.
Once it's out, Notch can still add stuff in. It won't be closed and done.

Part of why a lot of people dont know what "Beta" means is because a lot of major titles lately have been having "Beta" events. However these are not true betas, more of a public bug bash just before shipping. So many big name games have done this over the past couple years that it is no wonder the word has lost some of it's meaning.
