You call it cheating? I find that a bit ignorant; especially this early on. people edit items into their world so they may experience new content right away; and this in turn helps notch get timely results on his new content. Editing does not cause bugs; it doesn't hurt the game in any way.
As for the multiplayer aspect, you yourself said that only the owner or rather the host of the map could edit it with an outside resource tool; which makes calling it 'unfair' well...unfair. A map shouldn't be regulated by strict rules set by people who want to play it, but rather by the host and his or her GMs. If you don't like it, find a server you do; find one that fits your needs.
In addition; the rumor mills have been churning that notch has stated in the past that there will be in-game creative-like editing for GMs/owners and such to help regulate; so truth be told there may not be REASON to use an outside resource tool, because it will be at the host's fingertips.

I play legit for the most part, unless it's to edit in some TNT for a peaceful map. I haven't yet edited in new update material onto an old map, but I'm considering that now since I don't want the map to get any larger than it is.
I have maps for editting and maps for actual play. Usually my editting is for making challenges for myself. Or because I need to delay night time (**** comes too fast!)
I do everything legitimately, but with the new update I'm considering editing in at least one reed/papyrus/bamboo into my inventory to start up a small farm in my basement, which I will hopefully turn into a study once I grow enough. I'm playing on a snow map and I can't find a single reed/papyrus/bamboo anywhere after exploring from a 6mb map expanding up to 22mb. Found a metric ass-ton of clay, however. More than enough to renovate my fireplace and chimney. Also got a handful of cactus.

In Alpha (which this topic is about), I only play legit. The only editing to %appdata%/.minecraft/blahblahblah that I've done is replace the ambient cave sounds with Voskhod's supposedly-less-scary sound pack (I haven't actually heard the sounds in-game yet, probably for the same reason I've only seen a few spiders and no other hostile mobs for two in-game weeks). I don't use map-editing programs at all.
However, for Creative servers, I use [THIRD-PARTY CLIENT NAME REDACTED]. Fly- and speedhax are basically prerequisites to getting op on one server I frequent, and MC# advbuilder commands like /cuboid and /replace may as well be considered hax. But on Alpha, I play the way it's meant to be played. With the ocassional sound and texture mod. (Still want to try high-res textures, if I could just find an updated tutorial that actually works for Alpha and doesn't brick your entire Java runtime environment...)

Normally, I'm in the mood to **** around -- build a base, a series of cannons, etcetera. I do, however, have 1 or 2 saves completely dedicated to legitimate play, and roughly 12 dedicated to blowing up with TNT (ruins the level pretty fast, so I have to generate more every time). I then have about 3 or 4 build maps.
I do both. I usualy use NBT Forge to create things that i normally can't make (like the golden tower..where the hell will i get that many Gold Bricks??..or a giant tree, which obviously can't grow leaves) or to connect caves to make a massive underground cave/dungeon.
I just started toying with INVedit and it's useful for my world creation plans. Once creation Mode finally comes out for Alpha/Game i won't need to use INVedit so much, if at all. NBTEdit though is always useful for quick large scale structures or areas where gravity is a pain in the ass for me building.
I've spent hours upon hours playing the game legitimately, and today I broke down and downloaded INVedit, because I'm tired of getting mobbed when i first start off and night falls, having no defenses, no torches, and no way of surviving. The only thing I've used it for though is to get coal and iron. everything else I've crafted and mined myself.
Besides, it was my fifth map since I got the game, and the beginning is always so tedious.
I play without cheats, but sometimes it's just fun to give yourself some items and experiment with the game. Like, hell, I needed to mess with the redstone to figure it out and I didn't feel like digging for an hour to find it...

On the other hand, when im out of ideas, or want to test enormously dangerous things, such as TNT mining, or doing a project so enormous that it's near impossible (Maximum size steppe pyramid from the bottom of the map to the top with no other blocks above or around it.), I'll give myself a hand with MineEdit.
