What I did was generate a small, deep, flatland map, but then I opened it up in Omen and used the 3D circle brush to make a tube down the middle of it, with only very thin walls left behind. I put some grass tiles down at the very bottom, then used the Forester script to plant one humongous tree, which had no choice but to be planted at the bottom because the only other grass tiles were around the rim and didn't have enough area for the stump (pretty sure the script checks these kinds of things).
Then I realized that I'd effectively taken 90% of the land from my map, and all the ore and mushrooms that go along with it, so I opened Omen back up and added those things into it, but only on the cave walls so that I actually had to work to get them, and in what I liked to think of as a logical progression: more coal towards the top because you WILL need torches, iron ore a little bit lower, and then diamond quite a ways down so it's more rewarding. I didn't manually put in any gold, but I haven't reached the bottom yet so there may be some there from when the map was first generated.
The trunk basically becomes your home base, and you have to spiral down it to branches which are then used to get to the stone and ore from the cave walls. There's an opening in the middle of the canopy that lights up the trunk during the day, but it's not very helpful because I've already got that sucker covered in torches. I haven't tried farming at all - reckon I'll get to that once I've conquered the very bottom of the map, which is teeming with monsters and - from the sounds of it - lava.
I still have the .mclevel of it from before I dug in and started playing, if anyone's interested. You too can have a terrifying ordeal in a huge tree pit!
PROTIP: You can remove the crosshair by selecting the crosshair in it's whole in an image processor and inverting the color. The crosshair just inverts color in the actual game- this makes pictures look much cleaner.

This is the big tree level after I've done all my edits, but before I did any digging or collected any resources. You start on top of the tree looking down through the central hole in the canopy. At first it may seem so dark that you'll feel the need to turn the difficulty down to Peaceful, but monsters really only spawn on the cave walls or at the very bottom. Just make sure to light up them branches! :wink.gif:

Your pictures an illusion, I see threw your silly picture as it is actually 3 pictures configured to make the illusion that it is a giant tree, when it is really only one big tree inside a cave and not giant.
