Most notably the Sheep. I grew up on a farm with goats and sheep, and it really takes me back. I can't wait for more 'docile' animals to be around, and hopefully Notch will give us some way to 'guide' them.
Perhaps a Shepherd's Crook? Guides all nearby sheep to the user with a crook? Perhaps some way to 'tag' the sheep, so they don't just disappear after a while (so you could build something of a farm with animals).
That's somewhat off topic though, my main gear is I'm loving the sounds the animals make, and find it a nice touch. Hopefully sheep will show the colors of the wool they drop shortly?
I've noticed this as well, and yeah there should be a way to make an animal farm. Also besides sheep giving wool, I've noticed there are just plain MORE pigs and sheep.
I've thought that it might be a nice idea to have it where sheep and pigs spawn where there are lots of flowers. So if you wanted a ranch, just make a big field full of flowers, and even if the old ones disappear (or are slaughtered), new ones will eventually pop up back in your designated area.

That wouldn't work so well, you know extra processing power needed = old PCs will lag more.

Potentially the flags that Notch will be implementing will stop anything from spawning in their range as well as stopping monsters/animals from dieing naturally.

Perhaps it will work similar to Star Wars: Galactic Battle Grounds, when if you are near a docile herd animal, a collar in your team's colour appear around there neck. You can then control them as you would any other mobile non-attack unit. Not suggesting this exactly, but it could be similar. Say, crafting collars and whatnot.
