Oh god yes. I'm the same way with this game. Just last session I wandered into an absolutely massive cave system. I spent at least an hour getting completely lost and fighting off over two dozen assorted mobs. I was on edge the whole time, and after walking myself off a cliff into a dark pit with at least eight zombies in it, I lost my will to play for at least a day.
But yes, the sudden arrow sound in particular. It's so damned loud, and I too jump convulsively every time it rings out of the silence.
The arrow sounds are great. They always scare me, even though I'm basically immune to screamers in movies. I'll know a skeleton is there but it'll still get me, lol.
One time, I created a fresh world to find myself on a tiny island with not but dirt and sand. I was determined to make my home on that tiny island, so I swam to a larger one with trees to gather some wood, made a boat, and sailed back to begin digging. Almost immediately after my starting strokes I found an immense cavern beneath the tiny island. I realized I had no coal... but I was sure I could find some in the cave.
I hopped and picked my way down an awkward wall before reaching a small platform... this is all pitch black... finally seeing some coal off to the side. Hastily, I made my way to the coal and began picking on that shadowy plateau, so relieved to finally have the chance to make a bit of light in a big cave like this.

And whenever I'm in caves and hear spiders and zombies but can't see them, I get reallll scared. I usually go back to the surface. I hate caves.
once i was looking up into this large room my cave had connected to, there were about 8 spiders there as i counted maybe 16 eyes. i didnt get a chance to fight them because a creeper dropped on my from a ledge above and killed me and the floor, under which was lava. my stuff all burnt. \o/

Oh wow. I think at that point I'd just give up on the world and start a new one.
