I think this is a great change to the game. Before now bonemeal was the most overpowered aspect of the game. Insta-growing crops meant that 1 bone could give you a whole loaf of bread.
I know many people with an abundance of bones in survival with no real use. Now we can put them to use. Besides bonemeal still is useful because it accelerates crops every time, just not instantaneously. The only random bit is how many bonemeal it takes to grow it fully.

If you had that sort of abundance of bones, isn't it reasonable to say you ALSO have an abundance of food, making the point of more food kind of....worthless?
I'm still at a loss for why people don't get this. An entire chest of food thats never being eaten just takes up space. It provides no advantage if you already have a bunch of food.

Having a whole chest of food gives you the advantage of not having to farm constantly to get more. It allows you to spend significant time doing other projects and not farming every day. That is why people store food.
I'm saying that while I understand the change to bonemeal might seem sudden and unexpected to some, this change makes a lot of sense in regards to the overall gameplay within Minecraft. It makes farming and collecting crops much more of a challenge and not just a trivial affair.

Often times I only got 1 maybe 2 bones, enough to START a farm, but by no means make it large.

You seem to forget that the bones don't materialize in your chest. You have to fight Skeletons, one of the hardest mobs in the Overworld. Also, can someone inform me as to what the new numbers actually are?

2-7 bonemeal for a tree is more noticeable in randomization, but at least it isn't like before the balance where it took 7 bonemeal for a crop and 2 for a tree.

I think this is way better than before. I'm personally against the randomness but I'm happy that Mojang has balanced it.Edit: Oh wait it's only 2-3 for crops? Then that's not really random at all.
People get their pants in a knot too much. Dinnerbone experimented with nerfing bonemeal and everyone one went wee wee wee all the way home so he comprimised. I am happy with it.

I completely agree. I don't see why you (the majority here) are hating the bone meal randomization when the enchanting randomization is much worse as you get 3 bone meal from 1 bone. Although, I do think that maybe 2-7 is a little steep for a single tree, maybe 2-5 might be a little more reasonable.
I think it's a good compromise for the crops (although I personally would prefer just 2 bonemeal straight). However, the trees have far too much randomness. They should just be 3-4 or something.

This must make conventional farming OP. I've never had an empty food chest since the beginning of my latest world, and I've never used Bonemeal on crops.
Nor do I waste time farming instead of building. That's because I'm not farming constantly. I'm occasionally stopping by my farms and harvesting/replanting when I remember to check on them.
Getting a food supply isn't a big issue in any vanilla non-custom map, Bonemeal or no.

The bonemeal nerf really doesn't add anything challenging as far I can see. I'm just happy they reduced the nerf and made a compromise to make both sides happy. Also I think the crops really aren't random since it's 2-3(though definite number like 2 would be nice). With the tree thing I thing it's not much of a problem because saplings aren't really mass farmed however the randomness can be annoying to some(I'm indifferent about trees). Still, this was somewhat better than before and I think people should realize that Mojang couldn't pick every solution/compromise.
It's too bad they even think a solution is needed to fix this nonexistent problem with Bonemeal.
I think that the moment snapshot 4 was released it was too late to go back. So now they had to move forward. Which brought us here now to one of the best possible ways to balance it where it could not go back.
