I found a seed. It was pretty typical, with a few lakes and trees spread here and there. I noticed that there was something different about one of the lakes. I saw this:
So I went to go get I closer look. It's hard to see far through water when you're not submerged, so I turned the render distance to tiny so I could see just how deep it went:
I went submerged and went under the island to see this:
I went further under the island and came up out of the water somewhere else. That's when I realized that all of those small lakes led to one massive flooded chasm beneath the island.
Great; I'm a sucker for underwater caves and this one nicely fits the bill. Are there any points inside the cave that aren't submerged though? Such a point would make for an amazing base.
Also, OP; I suggest you make a challenge revolving around this, like the 404 one; it's a great way for this natural feature to gain popularity and recognition.
I play Minecraft standing on the roof of my house with a laptop, completely naked, the wind lapping at my hair and genitals. It is very refreshing. The neighborhood watch loves me.

I can't really think of anything off the top of my head, and I'll go searching for an air pocket. You could make a challenge if you would like though, I'm still thinking of new achievements for The Engineer Challenge.
EDIT: Sorry, I couldn't find any air pockets, but you could always just dig up.
I have found something like this before, but I eventually got lost in it and decided I was going to come back later. Then I forgot, and deleted that world T_T It was NOT a cave though. It went in a circle around this thin pillar underwater. Looked pretty nice.
