I would like to see better biome placement, too often I find deserts, jungles and snowy biomes directly next to each other, it's just unrealistic. As far as monsters go, some sort of underwater hostile mob would be nice. It is too easy to live underwater after you get down there, all you need is a farm and space then you're set.
i would add a canyon biome... basically with just massive canyons and they would have a new rock type that is redish and has the same features as sandstone.

Minecraft is not and will probably never be realistic. If you want Minecraft to be realistic you should start looking at all the other "unrealistic" stuff, not only the biomes.

I never said MC needed to be realistic, I just think that the current biome spawning is a joke compared to what it could be.
For a biome, I'd like to add the Origin Valley. Looks like the old alpha terrain, with oak trees with bright green leaves and grass. Raised chance of diamonds spawning, but also a higher chance for creepers to spawn. Occasionally, abandoned towns and houses spawn within it, with a zombie and/or skeleton spawner.
For the mob, I'd honestly prefer to have a red dragon. If you place the dragon egg on a level four beacon made of glowstone, after a few days a baby red dragon hatches. I assume it wouldn't be ridable, but it would grow to the size of the ender dragon (maybe a bit smaller, and the dragon should be made bigger). Once it hatches you can tame it with cooked porkchop. It follows you around (when you make it sit it lies down and curls up its tail). To help you fight, it can do a melee bite/claw scratch, and a ranged blast of fire (like a blaze). If it was rideable, you would probably have to charge fireballs, like you charge jump with horses. Pretty much a lot like the dragon tamer mod.
I think a flying hostile mob is needed. Get owned by land and air, hey even sea! Hahaha.

It can be really rare, and it wouldn't be like any old hole in the ground forming a valley, I mean like an actual crater caused by a meteorite or something. Sounds a little crazy but it could also implement the use of space rocks and what not. Just an idea I had at the top of my head. Any how, I would love to see something like that, a little mysterious and fascinating thing to encounter on your minecraft journey.
