Enderman are 3 blocks tall, use that to your advantage. Water will also save your life. A quick splash with your water bucket and you'll be good to go.
I always tame like 4-5 dogs. Punch him once and the dogs will attack him. Any time he teleports, they chase after him and attack. I get hit once, at most. Usually the dogs kill him in a few hits and I run off unscathed.
If you really want to be safe, get 6+ dogs, hit the enderman in the legs (less likely to teleport away) and then stand with you back to a tree.

if you hit a mob, there's a knockback effect. If you time it right you can kill them without them hitting you. That's kind of tricky though, and I wouldn't suggest it without armor.
Personally, if my goal is to actually kill the enderman, I'll just quickly build a two high roof over my head. They don't fit under, so as long as you don't get too close to the edge you'll be fine. If you don't want to fight, just splash water on them like others have said. If you're not carrying a water bucket on you regularly (I consider this vital equipment) then hop in a lake or something.

I've posted this thread because, I was almost killed by an Enderman!
You may be shocked to hear this but i switches my world to peaceful then back because, I didn't want to fight that enderman; I wasn't prepared.

Or if the sun is out hit them or stare at them - it should turn them neutral again.
Stand with your back up against a solid wall (like by a hill) where they can't teleport behind you and might get stuck in the rock.
Or just pillar up 3 blocks and kill him.
Or make a two block high "umbrella" stand under there and swing at him.
