Ever since this gamerule was added, I now am OBSESSED with UHC! It's so fun!! It's pretty easy too. Just load up a world, enter the gamerule, and bam! Currently, I'm trying it out on superflat. I'm down to 1 heart because I had to defend a village :/ +1 for you!
I thought Hardcore meant you only got one shot and when you died your save was deleted.
The default hardcore mode does mean that, but I made health not come back. If it was hardcore, it would really be boring to start a new world every time I died.

You should really read these books if you're a fan of, well, reading.

Also I do believe you can't turn off natural regeneration on hardcore mode, because there's no way to have cheats turned on in hardcore mode and technically, turning off your natural regeneration is a cheat, even though it makes the game significantly harder and I personally don't consider it cheating by any means.
Ultra Hardcore just means you don't regenerate hearts naturally, I believe.
Well if I'm not mistaken the Mindcrack group invented the Ultra Hardcore category, and they had "seasons" of groups of people playing it on Youtube. When you died you didn't come back. Which made sense because it's one step beyond Hardcore: Hardcore plus no natural regeneration.
My friend Seth plays it... what you're playing might be interesting but I wouldn't call it "Ultra Hardcore".

They are trying to kill each other, I'm trying to survive while making it more difficult. Technically this is ultra-hardcore, because I have to plan ahead and build, whereas they just try and get gear quickly, then go kill the other players. It depends on the person.

The PVP wasn't the important part; it's the fact that you don't get to come back after you die. In fact when they first started UHC there was no PVP.
