I ALWAYZ stalk the chikens and kill them no matter what situation im in, also i nearly always bury my treasure(gold,iron,diamond, etc.) in a hole away from my house. and i create classes for myself for differnt operations like chef, adventurer, miner, warrior etc.
Aside from gravel, I won't throw anything away, not even dirt. In SMP, before losing the world to update to 1.9, I had a large chest completely full of cobblestone. I'll use everything eventually, even the mountains of dirt I collected, but gravel is useless to me... hmph, attempting to obey gravity, the shame. At least sand has the decency to become sandstone or glass.
I must terrace everything. Whenever I build a new home there are neat rectangles and squares of perfectly flat little farm land and gardens everywhere.
My portal must be in some odd structure. My current one is under an icepack in the next biome at the bottom of a lake with only a single tree marking its entrance. You climb down through the ice and into an inverted sandstone pyramid, then down further stairs into a portal room.
Portal rooms drive me insane since portals can't really be centered along most of my buildings (since my other weird one is I must build sides that are odd numbers) and instead are usually in 2 x 3 hallways.
Usually after I build my first real home, I'm stuck for literally a week with nothing to do. I could go mine or farm but its like my brain runs out after I make my first house.
When wondering around, I always have to have my fist out. Also when crafting an axe or a hoe I always put the stone (or iron...ect) to the left, and I have to get rid of all the leaves after I chop a tree down.
Also, I challenged myself that on every server, I will either get a diamond hoe from someone, or use my first two diamonds to make a diamond hoe... simply for its uselessness. : P
All my lowest tier tools are used first. Also, if I have multiples of a particular tier of tool (such as two stone axes, two gold shovels etc.) I will use up one first before touching the other. Simply put, I very procedurally go through tools.
Lets see... I am quite strange at minecraft.
When I play SMP:

I must build in mountains, if I'm in flat, I can be happy but I feel safe in mountains
I always have to explore caves, if I can collect the ores or not
I horde things, when my friend was living with me and threw away a lot of my cobblestone stairs I got very angry.
I can't stand living with people that aren't organized. Including my best friend.
I always use stone tools, unless I need to get an ore you have to mine with iron, or obsidian.
I love obsidian, and always try to collect it.
Singleplayer:
I normally build houses out of wood
I must be symmetrical
No square houses
I'm extremely paranoid when I hear footsteps attacking mob or animal.
I dive head first into groups of creepers, and try to hug them.
I also enjoy living on floating islands.
I never turn on my music
I love chopping trees.
My inventory must go as tools above they're respective tools, a stack of cobble and dirt, no gravel

I always use stone tools for everything ican even though i have like 8 stacks of iron bars.
I always keep the first four slots of my hotbar the same (Pick, Shovel, Sword, Torch) and the other slots i rarely change (only for building or doing certain tasks like farming or breeding).
I collect every single piece of ore I come across, and instantly craft it into pickaxes...
AND NEVER. EVER. USE THEM. The amount of Iron Pickaxes I've held onto saying, "I can't waste it on cobblestone... I'll save it." Then I realise that... The whole POINT is to use them. And I find more iron by using one pick to make about two iron picks. But eh. What can you do.
I have the odd habit of making my home in strange places, usually in the middle of an ocean/sea, in the sky, or underwater. I think so I can completely control the mob spawning, good luck to the creeper who is going to blow up a fully lit house above cloud level (cloud level on fancy graphics). I also like being self sufficient, so maybe the fact my house is normally away from large amounts of resources, other then the stuff I produce (mainly wood and cobblestone).
Another quirk is gathering large numbers of wolfs if I have the bones for it, any zombie who thinks (if they can) they can kill me, will be sorely mistaken with my pack of wolfs, unfortunately they don't exactly work on creepers, which is a problem when I'm not focusing on the game.
I also like following sheep around, even at night. Its mainly since sheep are one of my favorite animals.
Finally, I enjoy making most of my homes like boxes, its kinda understandable, but who here has a cube house?
