This is what gaming is about, the game kicks your ass at first. But over time, you learn new and better tricks!
I took on the Wither in survival, and won. Build a nice area out of cobble, and bring good diamond armor, a good bow, a good diamond sword, a stack of arrows, and 4 regeneration II potions. Was still challenging, but I managed. Only used about half the stack of arrows. When you become withered, use the regen pots. The cobble won't break from his wither skulls, so a cobble area is a decent place to battle the Wither.
Edit: I imagine golden apples would lead to the same result.
I come back to the forum and the first thread I see is this. Come on, everyone was bitching about the game not being a challenge and they finally deliver a true boss battle that requires enchanting and people still aren't happy. BTW the uncaging thing is supposed to make it unable to be farmed, because that's what people are going to do instead of fighting it normally.
Best solution would seem to be to spawn him inside your mining tunnels where you've already cleared and lit up most of the space... Or mineshafts which you have completely explored.
In both cases you usually have some walls to duck behind to avoid being hit, and any digging out that he might do from moving around really only just makes him easier to get to, and gives you other passages to get to. After a point it might get slightly harder since you'll have mobs spawning in the dark spots, but since you should have enchanted diamond gear before even thinking about fighting the boss normal mobs aren't much of a threat and can be used to absorb some of the hits.
Frankly, having a boss which is difficult but entirely optional seems like a great idea and should be kept as is with only minor changes to AI and fighting patterns.
Even if you had 20 stars, it wouldn't be enough to offset just how many resources it would take to give you a slight bonus in a forty block radius of the tower, which has to be connected to the sky. The Enderdragon gives a much more useful reward for a much easier boss fight.
Also I wouldn't mind the difficulty as much if the jump from difficulty didnt go from casual (creepers, skeletons, ghasts, blazes, zombies) to insane, terraria skeletron prime difficulty.

I kind of agree that it's drop isn't terribly helpful. But it does fit the theme really well and is definitely something unique. I would be happy if they increased the droprate to 2-3 for the stars, but the fact that they drop anything at all is irrelevent. I think the main purpose of the mob is to challenge the player. Your reward is the experience of fighting an epic boss fight.

Maybe I just don't get this thing you call "fun", but I would be pretty annoyed after constantly killing Wither Skeletons and only getting to fight a potentially difficult boss fight.
No, in a game like this you need to give the player an incentive. A reward for progressing through hardship. Minecraft is a game about collecting resources to become a god. It's like saying that the only reason you fight the end-game bosses in Terraria is so you can have a challenge. The challenge is certainly great, but what really motivates you is the reward.
Now granted, I don't speak for everyone when I say this, but I'm sure most people agree that fighting the boss is not the only incentive.
Its just a grind to get them though....If someone really wanted they could spawn this on a server, given a nether portal, time, exploration, and patience.

Some sort of wands would be a nice edition...being able to summon lightning / fire / ice / ect. a good toy if nothing else.
Bleh, never mind...immune to fire.
Hypothetically I think spawning him in the end and getting a few dozen endermen to beat the living bejesus out of him would work... but still.
