Maybe another gamerule you could add would be "/gamerule tntGriefing (true or false)". It would enable/disable blocks being destroyed by explosions caused by tnt, beds in nether/end, ender crystals, and other explosions not caused by mobs.

One more idea:
/gamerule plantGrowth (enables/disables plant spread and growth - wheat, vines, mushrooms, cactus, melons etc.)

Don't open the full editor, because that removes line breaks (glitch).
If it still happens, I am not sure why, though you could try to forcibly create line breaks with [br]. However you need to open up code format, not the fancy-style editor (first button in the toolbar).

You can grant the haste effect to replicate fastMining. You won't have particles at all if you set particle visibilty to false when giving the effect. A good'ole redstone clock is the solution to the last problem.
I fully support this. I feel there should be more options to edit your world in Minecraft. In the next update, they will allow more customization, but more gamerules like these would be too cool.

Yup, I just realized after I looked it up that with the new @e selector you can effect villagers with resistance. It goes something like this: /effect @e[Villager] 11 1000000 255, which would give villagers resistance level 255 for 1000000 seconds. And you're right about the invulnerable tag: /summon Cow ~0 ~0 ~0 {Invulnerable:1} makes an invulnerable cow, which is better then the effect. So deathOfEntity is pointless, for sure.
(I need to think about these gamerules more before I post them)
The gamerules survivalFly and playerDamage are just for fun really.
/gamerule DoBlocksSetOnFire Enables or disables setting blocks on fire.
/gamerule WeatherChange Enables or disables weather changes. The weather ticks would just stop if set on false.
Thanks! Those two suggestions are already possible, though. There's a gamerule called /gamerule doFireTick that will either enable or disable fire from spreading. And to freeze weather you type this: /weather clear/rain/thunder 1000000 that will make the weather clear, rain, or thunder, for 1000000 seconds.
