1-5 Seeds 75%
10-24 Bread 75%
5-12 Sugar 75%
1-5 Pumkin Seeds 50%

It's a simple edition to villages, and just another way to find easy loot.

Windmills in the medieval age were used to grind grain into flour. This had nothing to do with iron or other ores.

Windmils do not use redstone. They are purely mechanical.
I'd be okay with water buckets, as windmills also had water-related jobs, but redstone... I'm 125% against redstone in villages. It always seems like something too advanced for villagers to have.
Regarding 232323's model - keep in mind that village rooftops extend over the walls, so you might want to break up the monotony a bit by doing that. Also, you should add logs next to the windows, like the other houses do.
Maybe singular windmills could also be scattered around the world, and not just be present in villages.

Yeah, considering they run around in villages with ZERO protection against zombies apart from golems (which I believe were made ages ago, when villagers were smarter)
