I made some roosts and took some pictures to show the types of structures players might create to house their Gryphons.
Sorry for the poor image quality. These were made in the Xbox360 release and the "Share to Facebook" option isn't currently working so i had to take these with a camera. I play the PC version of Minecraft too but i find the Xbox release more relaxing.

Are these player-built roosts or naturally generated roosts?
So I was thinking about the health/food mechanic. I think we all agree that the gryphon needs to eat, and it could die. So how would we track that? Dogs have the tail thing, but that seems a little hard to do with the gryphon, plus we are tracking two stats. There could be a health bar, but where would you put it?
Personally, I think gryphons should be immortal (because of the intense work required to raise one). If they are immortal, then you shouldn't be able to breed them, though, for balance.

The problem with that is that you have no risk of losing one. You can fly into combat without fear that your most prized possession will be destroyed. Now if it were a phoenix (hey why not, similar mechanics, greater rarity?) I would say it could die, and then it would be reborn after a few days. But that isn't how gryphons work.
I think it should simply be a lot oh health (like 1/4 - 1/2 of the dragon) and it could heal over time (like the player) when properly fed. You could also use health/regen potions on it. Perhaps you could even craft special armor for it, to further protect your friend.
Oh and a note on falling to your death: Wolfs have had some issue with being lost in far off chunks when the player unloads them, thus a flying gryphon would need to load chunks to fly home to you. It would be able to track your location anywhere in the world, but it would take a realistic amount of time to fly there.

Now if it were a phoenix (hey why not, similar mechanics, greater rarity?) I would say it could die, and then it would be reborn after a few days. But that isn't how gryphons work.

I don't like immortality because it takes all the risk out of using your gryphon (personal death doesn't count, that can happen anyway). While it still gives you a huge advantage. Either it would hit a point where it would need to be resurrected (weird) or it needs to be able to die. Just like your Protection IV full set of diamond armor and your sharpness/knock-back/fire sword may be lost, so should anything in the game.
Certainly it should be hard to kill, and multiple ways of further protecting it would be available, making it impossible to kill is just over powered.
As far as tail for health indication, it would not work well while riding it, and if the tail has any joints (it would need to) it could be hard to read. Something easier would be preferable.

Hm as for the tail... If the tail was a health meter, it might finally give players a reason to use third person view (Only briefly, to check health). Or another way for a Gryphon to show that it is low on health could simply be for it to make sounds:
None of us have talked about sounds yet. I think we are all assuming awesome Gryphon sound effects are a given (Awesome eagle sounds... maybe some roars... screeches, etc.). And this is true. They would definitely have sounds.
So maybe when they get hurt, they make sounds of pain every 15 seconds or so until their Rider (the player) feeds them?

I'm thinking it is probably simplest to just add a health and food bar to the GUI while riding them, it just seems like the best way to handle it. Even though you usually don't have that kind of info about mobs, it would probably be for the best. Simply add a second row of hearts/meat above the players (armor would move up to make room). The icons would probably be a bit different.

No i don't have specifics on health yet but zeel had suggested that it would have somewhere between 1/4 to 1/2 the health of the enderdragon and that if it is well fed, it should regenerate health like the player does.
As for how long it would take to grow, i do have an answer there.
My original thought was that the egg should take two to three in-game days to hatch. Once it hatches you will have a baby Gryphon that will take another two to three in-game days to mature (You have to feed it meat or fish every day. If you miss a day of feeding, that day of growth won't count). You then have to saddle your matured Gryphon (with a regular saddle).
If Mojang picks this idea up and adds Gryphons but skips the baby stage, and went straight from egg to adult, i imagine it would take about 5 to 6 days total.

Health should be between 1/4 and 1/2 that of the dragon. In other words, a lot. Exact levels would require play testing to find correct balance. It may be that fighting one would be too difficult, and thus lower health is required. Or it may be too easy to kill one, and health would need increased. There is no way to really know until a playable version is created.
As far as growth the egg stage would be something like 3 - 6 MC days, and the baby gryphon stage probably 4 - 8. As for differing health based on age? Had not thought of that! The egg would be *invincible* (collectible, and the drop could be destroyed) the baby would probably be about as much as the player. There could even be multiple stages before adulthood. Baby (can not fly), fledgling (takes off and loops about a bit) and then adult.
Another point: The gryphon would not be "yours" until you put a saddle on it. Thus you could raise/sell them on a server. Also they could potentially run off if not properly kept track of. You would probably want to construct a large room in which it could fly but not escape until it grows up.

Maybe they can only breed on the full moon, or maybe they only decide themselves after you've paired them up and hearted them, somewhere from 8-20 days... And you should need to build a special "brooding box" item or something like that, a little box filled with hay for the "female" to sit on that the egg is eventually laid into.. She should then be unrideable during that time.
Still... If (like dogs) the gryphons are only linked to one person, should they really be able to create a whole flock of them? You'd only be able to breed them obviously if you had two gryphons, so there's definitely the issue of that.. What's the purpose? It would just be for breeding them, you can't ride more than one... So.. Should you be able to grant ownership of the gryphon to another player by giving them something like the gryphon's whistle? Maybe you need to create a NEW whistle, like a map, for each gryphon, and play it when they are born several times until hearts appear, to make them bound to that whistle?
I was a little skeptical at first, not with the idea of having a ridable flying mob but with it being a gryphon... and why not just an eagle or other bird. But once I saw the concept art, I thought it looked great. It fit perfectly and was done so well that I'm completely for this. This is a very realist idea, especially with Support Suggestion number 2, seeing a gryphon fly in the direction of its nest from time to time... that's so awesome. Great idea.

They would then be unable to mate again for at least a few days, or at all while an egg is near by (you need to remove it. They will protect the egg however, so constructing the breading area to make it easy to collect would be required/advised.
In multiplayer anyone could saddle any adult gryphon, thus you could sell them fully grown, raise one for a friend, or simply trade in eggs.
