Okay so let me start off with this, some of this might be a long shot considering I know the coding for AI can take a considerable amount of time and of course I woudn't be suggesting it for just 1 update.
First off, skeletons. They obviously have aimbot. Earlier today I got hit through a wall by a skeleton arrow (-.-). I think it would be awesome if you could dodge skeleton arrows.
Secondly, villagers. Not to be harsh, but their AI is HORRENDOUS. It is neat how they will look at you and have "conversations" and things of that nature, but more options would be better (not to mention a new look ). Some of these things could be village battles between nearby villages (although this one is a long shot and unlikely) it would still be fun to see. But if you hit them, they don't even bother to run away from you, they just look at you funny and scurry off. Villagers have gotten some attention with the new trading system, which I enjoy quite a lot, but other than that they don't do much else, it would be awesome to see the "use" furnaces, crafting tables, enchanting tables, etc.
Next is wolves, or rather dogs. They are one of the most neglected mobs in the game. Yes, you can tame them into dogs, but dogs need better "skills". This is less of an AI issue and more of just the fact that dogs aren't really worth bringing on a cave raid or anywhere really. It would help massively if when you owned a dog, you woudn't be able to injure it.
Another mob that needs more fixing than actual AI fixing is Jockeys. They aren't a common sight so it is not a big issue but half the time the skeleton is floating in mid-air while the spider is hopping around. Not to mention because spiders can track through walls it can suffocate the skeleton. This is mostly the case because a spider jockey doens't have it's own model, it is a skeleton on a spider (hurp).
As for other mobs, I think it would be intresting to add some sort of thing that they could be attracted to such as zombies being attracted to doors (even if there's nothing inside ). Overall, I have seen some nice mob improvements over time but some still need that "kick" to make them more useful, less buggy or just to make them look better.

That wasnt exactly the point of the skeleton AI part, the problem I have with it is that they have a random shot that has the chance to hit you or miss, not being able to be dodged, you just get an overall chance of being hit.

Strange, Skeletons miss most of the time when I run straight at them or strafe to any side. On Hard difficulty mind you. Getting hit through walls is annoying though, and wish that'd be fixed.

Uhh no, I don't think that's gonna be in the works any time soon. Or ever. This has also been mentioned a lot of times already. Yes, I know the Squidward look isn't the best choice possible, but I don't see that changing.

Actually, this isn't a "long shot" and something "unlikely". Because this is something that's a very long shot, and very unlikely. Fighting Villagers is something people seem to keep suggesting, yet Mojang is just not gonna give that to us. We already know these Villagers are pacifists that remain cross-armed forever, this is why the big bad Iron Golem came in. No Village wars.
But if you hit them, they don't even bother to run away from you, they just look at you funny and scurry off.
You have a point here, perhaps at best they could at least run around in panic for a bit. Still though, you're only hurting yourself if you injure a Villager, because you'll give an Iron Golem (if spawned) a reason to come at you, and you bone yourself out of some good trades if you kill a Villager.

In that first part, I think it's best if other mobs didn't have an "attract" thing like the zombies did. Zombies are (one of) the easiest pre-hostile mob to deal with, and having them bash doors was a small buff for them. Other mobs do not require these small buffs, and would probably be overpowered if they did. No reason to have the mobs "look better", because they already look their parts.
