Why have the gold golem be a modified iron golem? It's not as if the pyramid doesn't have corpses it could use instead for it's dirty work. Try having the golem slowly plod towards an attacker/intruder, spawning zombies who attack said target all the while. If the golem or attacker dies, so do the zombies. I'd call it a Lich Golem.
Also make it, well, craftable. I'd say gold blocks, lapis blocks, a pumkin and THE BONES AND FLESH OF YOUR ENEMIES somehow. Whoever places the pumkin "owns" the golem, who will "attack"(i.e send zed to kill) those who dare presume to attack that person. It also "attacks" hostile mobs.

Being buildable? Sure. But maybe a way to tame them? An offer gold and rotten flesh? Still controllable while fairly rare and expensive.
Maybe it also periodically drops offers zombie spawn eggs to you after you tame it.
Also maybe Lich golems can be retamed by someone else with a bigger offer?
I'm liking this one.... it seems like a good way to make pyramids a little more challenging, perhaps making other golem mobs for the jungle temple and other future structures would be a good plan too?
Like an additional gold block on the back? or a lapis block? (i would like to see a lapis golem admittingly XD but back on topic) either way i think its a good 'miniboss'

How are you griefing the pyramid? Its not owned by anyone, and mining in a mineshaft/going through a stronghold/breaking a wall in any generated structure is not griefing.

I think he was simply using the word "Greifing" as verb for alterning the structure from its pre-generated state to provide arrow slots and attack vantage points or chutes through which you can dump lava/water to burn/drown the Gold Golem. This is why earlier, I suggested that a Golem that is not active (which is to say, standing still, not chasing players) should also be invulnerable.

Give it a new purpose. The Gold Golem knows it's master is dead, but gaurds it because that's all it can think of doing. When you bribe it, you give it a new, live master: you. And thus it can leave the past behind.
