Endermen do not seem to burn in direct daylight (just saw one wandering around in the middle of the day). I aggro'd him through staring, he disappeared, and has yet to attack me.
I decompiled the minecraft.jar files to have a look at the modified health and damage of mobs:
Endermen take 20 hearts of damage and deal 3.5 hearts of damage on normal(was 2.5).
Spiders take 8 hearts of damage.
Zombies take 12 hearts of damage and deal 2 hearts of damage on normal(was 2.5).
Cave spiders take 6 hearts of damage.
Thank God cave spiders were weakened. They were a little broken being so small, fast and poisonous (and numerous!) and being the same durability as the huge regular spiders...

Sheep, pigs, and cows will follow the player if they hold wheat. This seems to attract the attention of animals within a 5-ish block radius. The animals seem to follow indefinitely but will stop if they get stuck and you get too far away. This applies even before using the wheat to breed the animals.
I didn't test this on chickens cause I flew around for 5 mins and didn't see any.
I'm not totally certain yet, but there may be a limit of five animals able to follow you at one time while holding Wheat. I had two pigs and three chickens, but I could NOT get this sheep to pay any attention to me! But after I killed the chickens and tried again, it started to notice.
EDIT: Scratch that, it may have just been a bug with that one sheep. I now got like two pigs, a sheep, and four chickens following me.
Damn, I knew the fences attaching to solid blocks would make them look horrible when being used as supports or decoration. I thought they looked like crap before in the mine shafts now they are 100x worse...
