There are really hardly any griefers on the server, it's pretty nice. The Towny plugin helps guard a lot of stuff, but even in the Wilderness people are mostly only stealing things, not griefing, as stealing is not against the rules. We have a (relatively) mature playerbase, which helps keep the griefing to a minimum and the fun to a maximum.
