I think something is really missing with Minecraft's food system. Notch seems to be moving towards the right direction, one everyone agrees with, by having more varieties of food added to the game. But many of these varieties are, as far as gameplay is concerned, indecernible from each other. One foodtype may heal 3 1/2 hearts, another 4 hearts, big whoop.
Moreover, as has been discussed before it seems very odd and perhaps too easy that all I need to do to heal is devote 3 of my equipment slots to food and I can survive almost anything by healing fully in only a few moments.
I propose that another status bar is added to the hud: A Stamina bar. This bar is decreased by taking damage, and armor will prevent damage to the wielder but not the stamina decrease. Prolonged running will temporarily decrease the bar, as will mining something with a higher level than your tool allows (i.e. mining Coal with fists or iron with a wood pickaxe). Being attacked by a particular variety of giant spider (I say green or red) will cause poison damage, which has to be healed by the use of mushroom soup or some other naturally obtainable concoction. Poison will sap stamina slowly over time. Finally, when your stamina is completely depleted, you will become sluggish in movement.
This is where foodgroups come in. Grain causes quick restoration of stamina in low doses. For example, you eat a loaf of bread, and 10% of your stamina bar is instantly added. Veggies/fruit cause regeneration of stamina over time. You eat a head of lettuce, and every 5 seconds you regain 1% of your stamina. Meat restores some stamina instantly, but its main effect is to reinforce your current stamina, like armor reinforces health. Finally, sugary food will give temporarily stamina boosts, but in the end your stamina will be lower than you began with.
The most effective way of regaining stamina is through sleep. More compfortable beds, defined by the presence of a pillow, a matress, and sheets, will give back stamina more quickly. Perhaps while sleeping the player can play a minigame, or explore dreamworlds?
Comments and suggestions woudl be appreciated. I know stamina systems have been proposed, but this thread is mainly about their implementation alongside foodgroups.

the idiocy of other posters aside, I like the core concept of your idea, although I dissagree with some of the details. Stamina is a neat dynamic, I think, and it gives the ability to sprint, without overusing it, which is always fun.
one thing that I didn't see you mention is how healing would work. In other posts I expressed my support for the idea of food raising your 'healable' level and then your actual health increasing over time until it reaches the healable level... I still like this idea, but another idea could be that healing requires stamina. If you get hurt, your health goes down, and then it slowly builds back up while depleting you stamina, until your stamina runs out entirely.
As for different foods, bread is already made of simple carbohydrates, so I would propose that it take the place of sugary snacks, in that it just provides a quick spike of Stamina, and no health.
Meat is protein, so it would make sense to me for it to provide mostly health, or perhaps just a few seconds of accelerated healing and some endurance.
and vegetables or mushroom soup, I dunno, perhaps a bit of both? it's not perfect, but there's a few ideas.
I did some consideration and suddenly got a bit of inspiration from World of Warcraft: Instead of having to literally sleep, players would merely have to remain within a particular distance from a bed (Like being in an inn in WoW). When doing this, a "Zzz" icon would appear on the player's hud, and their stamina would increase steadily. On average, a player could regain all of their stamina from sundown to sunup if they start with 0 health, but improved beds would allow players to regain stamina faster, and perhaps receive some kinds of stamina boosts or status effects.
I propose a Wurm online style system: Your stamina rate of regain is affected by your hunger (and thirst, but that is irrelevant) bar. Such a system also exists in the game 'Haven and Hearth'.
If you have a high hunger bar your stamina regenerates at a very fast rate. It decreases exponentially from there, and you have around half the regen rate at 90% hunger or so. By the time you reach 40% it gets very hard to perform regular tasks due to low regen rate.
It caps at 20% which is a VERY slow regen rate to the point it can take up to 30 seconds to get enough stamina to do one task (such as lay down a block), and 10 minutes just to fully recharge the bar. When it hits 0% you die or something (Wurm doesn't make you die from extreme hunger, instead you 'fast' and lose weight, regaining hunger).
tl;dr: Eating doesn't directly boost stamina, but increases your stamina rate via a hunger bar.

Not another wurm, In my opinion stamina should regenerate while your idle eg. Crafting,preparing food, forging ect
kinda like wurm but not relying on food and water although food should relieve a small amount of stamina, being idle would be the way too go eg. mine untill stamina runs out go back and craft - stamina returns...
If we don't eat, don't we feel tired? Sick? The same could be said of sleeping, with the realistic turn Minecraft is taking, I think it would be a pretty amazing system to implement. Although, I think the creation of beds would be awesome, I sort of like the dream world idea, but not so much the minigame one. I think, if anything, you should have a choice once you right click to "Use" the bed. You can either visit this "Dream world" or you can skip overnight and instantly hit morning. (Personally, I hate standing around all night just doing nothing..Lol. If you have stuff you do overnight, simply eat something to keep your stamina up, but sleep should be crucial, do your work in the day time.) If the bed is inside of your house, you can do that, but if you wanna be "Hehe, skip until morning" by just using a bed in the open, yeah, you're monster food. It would require all openings to your house to be closed off. I have a small house, which I close off which is entirely made of glass [I like looking outside D:] and close off and make a "Door" with 2 blocks of wood. (Unless I'm playing Infdev, like I build a house inside of a mountain with a door and ladder leading up to it, lol.) I also have a green house area covered in glass with crops growing, so that's fully sealed off.
Point being, the house, though monsters couldn't enter through the roof, or such, would have to be completely closed off, to prevent them from "Infiltrating" your house while you sleep. Personally, I put a 2 block deep moat around my house, so they just, "haeuHAEUeauhUHAEU -Falls in and burns alive from the sun in the morning-" pretty funny to watch. Anywho, that's my idea, either "Skip until morning" and fully recover stamina, or visit the dream world for the duration of night, and wake up with full stamina. Sorry if there isn't much complex thinking, like having 60 bars to tend to, but the game started simple, I'd prefer to keep it that way, while being fun and creative.
Oh, I do that. But I hit some craaaazy **** man, lol. I just ran into a lava lining, I was using it to save torches, I crack open a wall, flow of water starts flooding in. This is in Indev, not infdev, I don't think there are monster spawns at all in Infdev, at least I haven't seen any, as it seems to only be a map tester. I just saw that, and went down, and hit an underground resevoir, but the floor was made of lava, and I just held in space to lift my height, and I was dying from being underwater for too long, and popped up out of a hole and I'm like "Where...am I? o_o" This game is endless and I love it. Just sometimes yeah, I do these projects on my house which take days, wouldn't mind saving alittle time, just found a big diamond patch, so I'm gonna be upgrading my tools.
