I've been traveling accross vast oceans by boat in my Survival world, up to 5000m far in various directions, but never encountered a mushroom biome. I'd love to find one!

How common are they? What's a good strategy to find one? Thanks!

It's very, very, very rare.
Try googling "Mushroom Biome Seeds" and see what you find.
Good luck. :)
The funny thing is, by the time you finish reading this, you will have wasted about four seconds of your life...

Using such a seed is a way to see one, however I'd like to find one on my own survivel world that I've been playing since the beginning, which has a fixed seed!

Just do as I did, stock up on food and boats, pick a direction and go.  You might just enjoy the journey.
In the real world, you stick your head in the dirt to hide from problems.
In Minecraft, you stick your head in the dirt to find problems.

Yea I haven't found one yet either, but haven't looked super-hard.  Been tooling around some major oceans but no dice yet, not committed either, I find it more fun to mine diamonds and build stuff.

Unless you can find a good seed, it's all chance.

heres what you gotta do!
get the seed on your survival map,
make a new world with that seed in CREATIVE mode,
and just fly around in the direction you think the biome is.
p.s: try to remember landmarks.
p.s.s: you can fly in the direction your facing automatically simply by flying straight and after a couple secs press ALT, your screen will freeze, then take your finger off "W" and click the mouse!

You can use AMIDST, a tool wich makes a map of your minecraft seed, it shows villages, dungeons, and mushroom biomes as well.

Except not dungeons.  This is by far the easiest way.  Try "shroomseed".

While this won't help you actually pinpoint a mushroom biome, I recommend entering the Nether and picking a direction. Every 1 block traveled in the Nether is equivalent to 8 blocks traveled in the Overworld. This method is obviously a bit more dangerous, but if you're careful it might be a much easier way to find a mushroom biome, and in the very least is an easy way to get very far, very quickly!
