Well the title says it all.  I play on easy most of the time because I like to have mobs turned on but i live in a desert so pigs are few and far between.  I know that if mobs are on normall they hit more than on easy but does it change the spawn rate?

1) Difficulty does not affect spawn frequency.
For reals. This has been verified in code. The spawning algorithm makes no check of the difficulty parameter in spawning mobs. Even Peaceful technically has the same spawning rate, though the hostile mobs are removed immediately afterward.

Well.. a little..
If your on Hard Mode then it's like Peaceful Mode cause nothing really spawns but when something does it will hit really, really hard.
Hope that helps!
Oh and btw, if you get some Dirt Blocks, (From under ground or whatever) and just put them down (At least have it 5x5) and grass grows on it pigs, sheep, cows will spawn!

I dont know why I chose to live in a desert. I spose its just were I spawned because you always spawn on sand.

I dont need to get dirt from the cave I could just go on a 3 minute walk to the forest its just it would be anoying to do that every time i wanted food and most of the time pigs wouldnt be there.  And I thought pigs needed grass to spawn not dirt
