Beehives -> Wax -> Candles ... (and more?)

My suggestion is to introduce a "Beehive" block that can sometimes spawn in trees, randomly attaching itself directly below or directly above any chunk of leaves (provided the space directly below or above is air). This block is something that can't be placed down by players. Once you break it, it's gone.

In-game, it could look like this:

Initially, I thought it should randomly replace chunks of leaves, but that would ruin people's custom hedges if anyone does that with trees I guess. Having it spawn only below or above a leaves chunk means, yes, a Beehive could still pop into existence on your tree hedge, but you could just destroy it.

When you destroy it, it breaks, and pops out a 2D sprite item, much like when flint pops out of gravel. Each Beehive block, when broken, produces 1-3 items of Beeswax. One Beeswax with one string above it in the build window yields a Candle! This is a light source that can only be placed on flat surfaces, unlike torches. It also has a smaller light radius than a torch. However, it is a light source that requires no Coal, and might just be fun in general as a decoration on a table or shelf.

In-game, the build process for the Beeswax, string, and Candle could look like this:

This is where my idea ends, but, I would like to note that there is a lot of room for other ideas here. The Beehive blocks could also produce sprite items of Honey, which you could eat, or combine with something else. Also, there is an opportunity to add more uses for the beeswax item, since wax can make a lot of things.

A note on Beehive count: It would be bad, of course, if the Beehive spawn rate was too high, since it would be ugly to see a Beehive in every other tree or so. With the right tweaking, it would be great if the ratio was about 1 hive per 20-30 trees.

Another thing to note is the method of spawning these blocks. If the server continually spawns them, say, one every five minutes, even if the spawn is proportional to the current size of the world, this means as long as the server is active, most of the trees would eventually be infested with beehives. One idea to avoid this (that I just thought of), is to first, spawn Beehives proportionate to the world size. Then, when a hive is broken, a buzzing "swarm of bees" sprite enemy (which can't hurt you and you cannot kill) flies out and buzzes off to some unknown location in the horizon and upon landing on (or under) another leaves chunk, instantly creates another hive. This keeps the amount of hives in check and it will NEVER overpopulate. Of course, the bees could be an instant, server-side thing, invisible to the clients, if coding the traveling bees is too annoying/pointless. Just have another hive pop up somewhere when one breaks. Also, if players travel and expand the map, the hive count would update accordingly.

I hope it isn't too surprising that I was only disappointed in the idea because you suggested destroying the beehive, because the idea of being a beekeeper in Minecraft would be too cool to pass up. Honeycomb anyone? Mmm...

Otherwise, I like the idea :D Plus, thinking of candles gets me to thinking about about oil lamps for some reason, combine a block of cow hides or something to make rendered fat for oil? I don't know, I am just spit balling ... ooo, maybe go whaling?

I really want to see creatures and monsters in the water and air for extra fun. Swarm of bees, only able to hurt them with say ... something fire related.

How about this:

Whenever a tree is created via the generator or via a sapling growing, it has a small chance (perhaps 5% ? Perhaps 2%?) of spawning with a Beehive block as well.

Beehive blocks can be broken for 1-3 Wax and 0-1 Honey. Doing so will spawn a Bee Swarm mob, which would be the size of one block and fly after the player. It would be resistant to swords and arrows (it would take a lot of swings to kill it) but it dies instantly if submerged in water or set on fire.

Wax can be used to make candles (as shown above) but if you make a 2x2 block of Wax, it'll create an Apiary block. These look somewhat like Beehive blocks, but look more like honeycombs than the beehive pictured above.

Apiary blocks can be destroyed just like Beehive blocks, and will drop 1-3 Wax and 0-1 Honey, and spawn a Bee Swarm mob, just like breaking a Beehive block.
However, Apiary blocks, when right-clicked on, open up a Beehive interface that shows the honey and wax content of the Beehive. It'd be like a simplified Furnace menu.
Every once in a while, an Apiary will generate one Wax. This is a slow process, but it will accumulate in the "bottom" slot of the Apiary menu. You can remove these easily, and not have to suffer from being attacked by bees.
Likewise, every once in a while, an Apiary will generate one Honey. This is also a slow process, but it will be quicker the more flowers are within a 20 block radius of the Apiary that are (a) connected to it via Air, and (B) under sunlight (bees forage during the day only). This Honey appears in the top slot, and also prevents attack by bees.

Honey can be consumed to heal 1 health (which isn't much, but since it stacks, you can take a lot of it with you, perhaps stacking up to sixteen?), but it can also be placed like a Block; Honey blocks look like jars of honey. They can stack on top of each other, but torches and ladders and such can't be placed on their sides. They would also look a bit like vases, so would be a good choice for ornamental decorations.

Honey and bread can be combined like follows:

This would make a Cake. Cake can be eaten to heal 5 health. Cake doesn't stack, however. It too would have a block appearance if you place it. It would look like a delicious golden cake, sort of a spongecake texture.

Perhaps it would be possible to make an inert Honeycomb block, too. It would look just like the Apiary block, but have no bees (and thus, perhaps, look somewhat "hollow" instead?) and it would be harder to craft, using a crafting table and following the recipe for making a Chest, but with Wax. Perhaps you can store Honey inside of them? Hmm...

Fun idea. I'd love to be a beekeeper.

i know how this could be incorporated with beekeeping:
