Where in Minecraft_creeper_test, inside of minecraft.jar, is items.png? I'm looking to put the Herobrine theory to a test.

It isn't in minecraft_creeper_test , that's normal survival.
It isn't in items.png, it's a texture.

It's for the ALPHA only.
What you want is %appdata%/Roaming/.minecraft/bin/minecraft.jar
You will want to make Terrain.png 512*512 and then replace the door with whatever you want.
Or open kz.png and do the same

This is CLASSIC survival, not Alpha, where Herobrine is actually located.

Herobrine isn't real. He's a campfire story.
