Three of the first rooms I make nowadays are:
-Kitchen: first room I enter when entering my house, has cakes around so on entering my home I can immediately top off my health, with chests/furnace/workbench with all the food and means to make it
-Dye Observatory: up high, place to story all my dyes/wool and where I can get a good view of the area around my house, basically where I plan projects from
-Bedroom: safe room with bed and such

Still no infinite strongholds D:
I do not have a house. I have a large, safe structure, but house isn't the word. Minecraft does not really necessitate a house. In my structure, there are only two "rooms", both underground. The main one contains a bunch of chests, furnaces, a crafting bench, an incinerator, and a small wheat farm off to one side. The other is an underground tree farm, currently unused. The ground level contains a lot of empty space, a water pool for filling buckets, and a small cactus farm. The next level up is a large area of grass for friendly mobs, and my portal came out on top of it too. I meant it to be on the ground level, but it's there now and I can't be bothered to move it. The next level above that has a reed farm, and the top level will be a lookout when it's finished, I think.
That's everything you need short of a monster grinder, and nothing you don't need either. Caves and mines are below, but that should go without saying.
-foyer
-personal study (basically books and personal storage)
-personal quarters
-storage room
-guest wing
-kitchen
-underground farm
-portal room
-boat facility (like a submarine pen, but without the submarines)
I also plan to build a giant "opera house" type area which will showcase my musical Redstone contraptions.
Under Sea Level: Cactus farm retrieval point(the farm is on another island), 9x9 barely underwater farm, storage for all my blocks of iron, lapis, and gold. Only one block of diamond, though...
Floor One: Furnance, machines(IC), an open shaft down to bedrock, a tunnel to farm, a tunnel to automated cactus facility's collection point, a dog pen, all of my chests.
Floor Two: Solar panals aglore. Three lonely trees, destined to die. Glowstone in the ceiling of Floor One, to be covered.
Planned/Under Construction:
Underground: A 50 by 50 mob trap at level 30, accesed by the above mentioned shaft. One obsidian'd portal.
Floor One: A cooblestone generater.
Floor Two: One 9x9 indoor treefarm. Spans two or three floors in height. A machinery.
Floor Three: Treefarm continued. A bookshelf adorned room.
Floor Four: Treefarm continued. A room filled with shelfs displaying... CACTI!!! Loads and load of them!!
Floor Four, Appendium: A pig spawning, drowning and automated delivery system.
Check out this baby. It's a thread called "Staple structures every survival map should have" and is fairly comprehensive. I like to build my homes and fortresses in caves and mountains (I am a dwarf and I'm digging a hole...diggydiggyhole...) and especially like the Canals that this person added. It saves you lots of iron and all you need is a slight downgrade. Also, Log Flues aren't bad if you have a long way from a forest, just drop wood in there and go home (Before the items despawn and pick them up. Or be lazy and carry them. But, seriously, check out this thread.

Wait...what? Not just at 'aglore' but Solar Panels? How do you make them? If you're willing to tell us forum lurkers, post some screens and what they are in a nutshell. Also, sorry for double post. Boy, do I feel :Sheep:-ish.
The single story houses I build usually have a floor space of about 4x3/5x4 and have a bed, at least 3 large chests, a crafting bench and 2 furnaces. That's all I need to live in. I always put portals outside because of the sound being annoying. I've never had the resources to build an enchantment room, so I assume I would probably make another building completely for it.
1. Main chamber
2. subchambers that lead to other rooms
3. Bedroom with connections to:
a. Nether Portal Room
b. Crafting room
4. Vault for storing supplies
5. Entrance to Mine room
6 . Sublevel: two small farms
My house is underwater though, so expansion is pretty damn anoying. As a result I useually build everything dome shaped and love to make sublevel kind of rooms. It gives the house depth I think.
