I really don't like birch trees much, especially the leaves.
I could figure out how to change the birch logs but the textures for the leaves are grey and in the game they come out green

In the vanilla game, you can't. The color overlay is hard-coded.
If you have MCPatcher installed, though, you can create a Custom Biome Palette for birch leaves. You'll need to have MCPatcher's Custom Colors installed to see the changes, though.

Correct me if I'm wrong, but was under the impression that you could change the biome colors under minecraft> Textures> Colormap> foliage.png.
Yes you can, BUT the color for birch leaves is still hard coded. They cant be changed. They like swamp biome colors are amung the few that mojang still insists on keeping hard coded, with the need of mods to change >.<
