I've been making giant farms in my survival worlds, and walk away to harvest a few stacks of wheat from my wheat farm, and I come back, and my cows have walked through the walls! This is not the normal glitch, where you can just hit them and they will teleport back, I have sat there and watched a cow just randomly walk through the damn wall! It's really making me angry, as I cannot breed fast enough to keep the cow population, while also being productive. Also, if you name a redstone torch, put it down, and pick it up again, it's just a normal Redstone Torch! I killed my friend Gerrett with a Redstone Torch, then named it The Gerrett Slayer. Then, I put it down as a trophy, and then I picked it up to show a friend the name, and the name disappeared! It was just Redstone Torch! Noes! =(

I don't know what you can do about animals glitching through walls but the naming mechanism is actually behaving correctly. You can name any block but it will only keep the name until you place it. Since it changes from an item to a block it has something to do with the data associated with the item. Same goes for dirt; if you name it, it will keep the name until you place it.
So if you put, for example, a named redstone torch into a item frame would that change it back from whatever you named it to "redstone torch"?
I don't believe so. The "items" in Minecraft can be broken down into 3 categories: blocks, items, and entities.
The things in your inventory, hot bar and held in your hand are items. Once you drop them on the ground (floating, not placed) they become entities but are still items. If you place it on the "grid" of the world (left trigger) it then becomes a block. For example, a redstone torch. In your inventory it is an item. If you place it in an item frame, which is also an entity, or drop it it will become an entity. If you place it on the ground it becomes a block. I think the data change only occurs when it becomes a block but I'm not 100% sure.
