I think Phil should win because his roller coaster ended with Benjamin getting eaten by a dragon.
If that doesn't count though, I'd have to give my vote to Josh's Trollercoaster, and that's because minecarts are still kind of limited in what they can do. They can go up or downhill fairly fast and roll off cliffs, but that's about it. If there was such a thing as sticky rails and if you could place rails upside-down like stairs, you could make actual loops, spiral highways, and more neat stuff, giving your builds the thrill of a real rollercoaster, but we don't have those yet. Josh worked around those limitations by putting creeper heads in his tunnels, making you think that your life was about to end in a violent explosion, so I commend him for his innovative means of putting the thrill back into minecart rollercoasters.
