Is it very rare especially if there are other passive mobs? Does this only apply to single player old chunks or multiplayer too?

Nope, only in newly generated plains biomes.

I'm not sure, but they're are usually 3 or more groups of different coloured horses but with different patterns on them(spots, no spots etc.)

Horses have been spawning in my old plains chunks. They're rare though.

Guys, you might want to check out this video, which shows -- pretty definitively, if you ask me -- that horses will spawn randomly in old, pre-1.6 chunks:

Village Mechanics: A not-so-brief guide - Update for 1.4! Added subsection on iron farming to the iron golems section. Only ten villagers required to spawn golems (down from sixteen)! Put to rest the "facing doors cancel each other" myth!

Thanks for that IronMagus, could've sworn I'd read it was new chunks only. Time to re-visit some old worlds methinks :D

Sorry for the mis-information Winter_Mage :-(

If they do, that's useful.  My server has had a map reset too recently to go through another one, and we have a border so the map doesn't get too big.

Nope. This applies for any update. New features/implements will not be found in former territory.
will only be found in newly generated chunks, all new features will work in old territory.

The bad news is I've only found one horse in an old chunk so far so it's still really rare :(

Kind of vague isn't it :P. That could mean you wouldn't be able to use stained clay in former territory.
